Soba noodles contain protein, fiber, various vitamins and mineral, as well as some antioxidants. This is why they should be part of your well-rounded diet! 🙌🏽 Ingredients: Soba Noodles - 2 bunches Red Bell Pepper - 1/2, julienne Green Onions - 4 sprigs Red Cabbage - 1 cup, julienne Eggs - 1, scrambled Ginger - 1 tbs Garlic - 1 tbs, chopped Soy sauce - 2 tbs Rice wine vinegar - 1 tbs Sesame Seeds - garnish Sesame Oil - 2 tbs Avocado Oil - 1/2 tbs Sriracha - optional Instructions: Cook your soba noodles until they are al dente and then rinse them under cold water. Heat up your pan to medium-high heat and add the avocado oil, followed by green onion, and red bell peppers. Next, crack an egg in the pan and scramble. Add the garlic and ginger and continue to stir fry. Now add the rest of the oil to the pan followed by the noodles, soy sauce, and vinegar. Add the red cabbage at the end.
