Super Yummy Pumpkin Curry It’s National curry week so I couldn’t not make one! And this one was delicious!! So creamy 😍😍 Ingredients Olive oil
2 large chicken breasts cut into small pieces ½ can pumpkin puree 2 tablespoon tomato passata
2 teaspoon minced garlic cayenne pepper
1 teaspoon curry powder 2 tablespoon double cream
250ml chicken stock 1 small onion finely minced Sprinkle of salt In a pan, cook your chicken in oil and then set aside. In the same pan, add some oil & cook the onion for five minutes & add garlic, pumpkin purée, chicken stock, double cream, tomato passata, salt & pepper (basically all the ingredients 😅) bring to a low simmer, add the cooker chicken and simmer for a further 10 minutes.
