I’ve cooked a steak directly in charcoal before, but never like this! These Pie Irons are great for making sandwiches and pies over live fire or charcoal, and this double pie iron is just perfect for a steak! I grabbed a prime NY strip and decided to put it to the test! I started off by lighting some charcoal and laying the pie iron in the coals to heat up. I recommend placing some charcoal on top as well to get even heating. While that heats up, season your steak however you prefer! I used a seasoning blend that’s designed for high heat, which i can’t stress enough lol…. This will get extremely hot! Once the steak is ready and the iron is hot, let’s open it, add some avocado oil, and flip to make sure everything edge is coated before adding the steak in. Once you place the steak in, quickly close it up, make sure it’s secured, and place coals on top to keep our heat as even as possible. 90-120 seconds should be perfect, but this really only works well this steaks about 1 inch or so in thickness. Anything too thick may be rare still, and too thin would be slightly over cooked. Just adjust time based on the steak you are using! Make sure to let it rest about 7-10 minutes, then we can slice it up and enjoy!
