BUFFALO CHICKEN PROTEIN PASTA SALAD Ingredients 1 box of @barilla protein pasta 1 rotisserie chicken 3 celery stalks, diced 1/2 a red onion, diced 3/4 cup cherry tomatoes, halved 1 can of corn, drained and rinsed 2/3 cup fat free or reduced fat shredded cheddar cheese Dressing 1/2 cup nonfat Greek yogurt 1/2 cup buffalo wing sauce 2 tbsp ranch seasoning (I just buy the ranch dip packets) 1/4 cup milk of choice, I used almond (add more for a thinner dressing) Instructions 1. Cook pasta according to package instructions. While pasta cooks, remove the skin from rotisserie chicken. Then cut off the meat and chop it into small pieces. 2. Chop your veggies and set aside. Prepare your salad dressing by whisking together all dressing ingredients until smooth, adding more milk if it’s on the thick side. 3. To a large bowl add pasta, chicken, celery, onion, tomatoes, corn, cheese. Then pour over dressing and toss until everything is well combined.
