Crispy Black Bean Tacos with @Eat Figs Not Pigs 🤗 #veganrecipes INGREDIENTS: • 1 (15-ounce) can of black beans, drained and rinsed • 4 cloves garlic • 1 chipotle in adobo sauce, optional • 1 tsp each: cumin, ancho chili powder • ½ tsp each: salt, pepper, garlic powder • ¼ tsp cayenne powder, optional • Vegetable oil, for frying • 6 tortillas • ½ cup shredded cheese • Shredded lettuce • Salsa or Pico de Gallo • Fresh lime wedges, for serving, optiona Place the black beans, garlic, chipotle pepper, and seasonings in a food processor, and pulse until smooth. Taste and adjust seasonings, if necessary. Spread a few tablespoons of the black bean mixture into each tortilla, followed by 1 to 2 tablespoons of the cheese. Fold in half and set aside. Heat a couple teaspoons of the oil in a large nonstick skillet over medium heat. Working in batches, fry the tacos until golden and crispy, 2 to 3 minutes per side. Fill each taco with lettuce and serve with your favorite salsa and fresh lime wedges, and enjoy!

Ok, what are you having for dinner tonight, because Mondays have long been traditionally meat-free for us so I thought I’d re-share this one: Spiced Roasted Potatoes, Cauliflower & Chickpeas and Creamy Hummus. Serves 4-6 INGREDIENTS: 4 tbsp olive oil 1 x 400g (240g drained weight) can chickpeas 400g baby potatoes, washed and halved 400g cauliflower florets 2 tbsp cornflour 1 tsp sumac 1/2 tsp cumin 1tsp paprika 1tsp pul biber 1 tsp garlic powder 3/4 tsp sea salt flakes 1/2 tsp coarse black pepper 1 tsp dried oregano 1 tbsp sesame seeds Hummus: 1 x 660g jar chickpeas 1-2 finely chopped garlic cloves (to your own taste) 6 tbsp tahini 1 tbsp extra virgin olive oil 1/2 tsp salt 60-80ml freshly squeezed lemon juice (or to your own taste) A little ice cold water to loosen the mixture if necessary (just add a tbsp at a time) Method: Preheat your oven to 200c fan / 220c. Brush a large non-stick baking tray with 1 tbsp of olive oil and pop in the oven for 10 mins while you prep the vegetables. Pat chickpeas completely dry and pat potatoes and cauliflower dry too. Add vegetables and chickpeas to a large bowl, sprinkle over the cornflour, and mix well with your hands until fully coated. Add 2 tbsp olive oil to the bowl along with sumac, cumin, paprika, pul biber, garlic powder mix again, add remaining olive oil, salt, pepper, oregano and sesame seeds, stir well again. Add everything evenly to hot tray (oil should sizzle), placing potatoes cut side down, the pop tray near the top of the oven (in between middle and top racks) Roast for 30-35 mins, turning potatoes and cauliflower halfway through (if some cauliflower florets start browning too much, remove before the 30 minutes is up) until crispy all over. While the vegetables roast, whizz all the hummus ingredients together in a blender, then spread over a large platter. Top with the roasted vegetables and a sprinkling of sumac, cumin, paprika, pul biber and fresh parsley, a generous drizze of extra virgin olive oil. Details below⬇️ 250 grams tortellini 1/3 cup butter 3 tbsp olive oil 2 cloves garlic, chopped 1 cup whipping cream 3/4 cup parmesan cheese 2 cups spinach, roughly chopped Reserved pasta water, about 1/3 cup (more if you need) 1 lemon, juiced 1/2 lemon, zest 1/4 tsp pepper 1/4 tsp red pepper flakes Basil for topping (optional) *Start by bringing a large pot of salted water to a boil, add your tortellini and cook according to package directions. *In the meantime, add your butter and olive oil to a large pan set to low/medium heat. *Add your fresh garlic, pepper, red pepper flakes and sauté for about a minute. *Add your heavy whipping cream and bring to a simmer for about 3 minutes, or until it reduces slightly. *Once reduced, as the juice of your lemon, stirring often so the mixtures doesn’t curdle. *Add your zest and parmesan cheese and mix until melted and sauce thickens. *Add your spinach, cooked tortellini and a little bit of pasta water and combine. *Add more pasta water if you need and taste for any additional seasonings here. *Top with fresh cracked pepper, lemon zest, parmesan cheese, and basil! *Enjoy! #samsdinnerseries #tortellini #creamsauce #lemons #whitesauce #pasta #vegetarianrecipes #vegetarian #lemoncream #onepotmeal #quickdinner #weeknightdinner #weeknightmeals #foodtiktok #easyrecipies

Groceries have been SO expensive recently so ‘budget bites’ will bring you NEW recipes that make use of pantry and freezer staples to help stretch your grocery budget! This one pan vegetarian taco skillet is a FAVOURITE of mine it’s so easy to make and the total of all the ingredient was $18.43 which works out to just under 20/serving (highly recommend taking advantage of in store sales on cheese and freezing it if you can + purchasing dry ingredient such as quinoa in bulk) !
