✨10 Minute High Volume Lunch✨ like, save, and follow @practical.nutritionist for more easy, healthy recipes I can’t tell you why I love this, I just do. It’s so much food, it’s so satisfying, it’s so easy, it just.. you know, one of those staples that makes eating healthy easy. And for me, a high volume of veggies is hit and miss on my digestion, but zucchini squash goes down easy so that’s a HUGE win. Ingredients for 1-2 servings (All depends on you): - 1 tbsp olive oil - 3 zucchini - 2 cups tomatoes - 2 tsp salt - 1 tsp pepper - 1 tsp onion powder - 1 tsp garlic powder - Grain of your choice: 1/4 dry farro cooked (I think it ended up being 1/2 a cup cooked) - 3 eggs Directions: 1. Sauté zucchini with olive oil over medium heat while you chop the tomatoes. Add tomatoes, salt, pepper, onion and garlic powder. Cook until the veggies are soft 2. Once your zucchini is mostly cooked through, make room on the side of the pan to crack the eggs. Scramble to desired consistency. 3. Add grain and toss everything together. 4. The best lunch to share with friends - Flat Ham Pie #fyp FULL RECIPE 👇 Ingredients: 1 sheet puff pastry 6 slices good quality ham (I use Jolly Hogs) 100g Gruyère 50g Parmesan 50g butter - melted 100g fresh breadcrumbs 20g dill / 20g chives - chopped 1 clove garlic 2 tbsp sour cream 1 tbsp Dijon mustard Method: Roll out the pastry to make it thinner / bigger and cut in half so you have 2 rectangles, 1 slightly larger than the other. Prick one with holes using a fork then place on a baking sheet and bake in a 180 oven fan for 10-15 mins. Meanwhile, grate the cheeses and mix with the breadcrumbs & melted butter. In a separate bowl, mix the sour cream, grated garlic and mustard. Remove the pastry from the oven and allow to cool. Keeping a 1 inch border around the outside, sprinkle half the cheese mix into the centre. Lay over the slices of ham, spread over the sour cream mix, sprinkle with the herbs and finish off with the remaining cheese mix. Place the second rectangle of pastry on top, seal with a fork around the edge and brush with a beaten egg. Bake again for another 15-20 mins until golden.

Close the sandwich and continue cooking on low/medium heat until the cheese is melted 4. While the sandwich is toasting, prepare veggies on the side. 5. Plate and enjoy!
