And for me, a high volume of veggies is hit and miss on my digestion, but zucchini squash goes down easy so that’s a HUGE win. Ingredients for 1-2 servings (All depends on you): - 1 tbsp olive oil - 3 zucchini - 2 cups tomatoes - 2 tsp salt - 1 tsp pepper - 1 tsp onion powder - 1 tsp garlic powder - Grain of your choice: 1/4 dry farro cooked (I think it ended up being 1/2 a cup cooked) - 3 eggs Directions: 1. Sauté zucchini with olive oil over medium heat while you chop the tomatoes. Add tomatoes, salt, pepper, onion and garlic powder. Cook until the veggies are soft 2. Once your zucchini is mostly cooked through, make room on the side of the pan to crack the eggs. Scramble to desired consistency. 3. Add grain and toss everything together. 4.
