MY FAVORITE SALAD EVER ! 🫶🏻 this recipe was based off a basic recipe i got from @giadadelaurentiis but i added my own twist! SO good! 👌🏻 Heat oven to 425. Chop 3 heads broccoli into very small pieces. Place on parchment lined baking sheet. Add 20oz shredded Brussel sprouts to sheet. Drizzle with 2 tbsp olive oil and 1 tsp salt, toss, and bake for 20 minutes, tossing half way through. Let cool. While baking, chop 8 pitted medjool dates and 1 cup salted almonds into small pieces. Set aside. Cook 2lb raw, peeled, tail off shrimp by heating a pan over medium heat. Add 1 tbsp butter and 1 tsp Calabrian chili paste. Add shrimp and a pinch of salt. Cook two minutes per side and turn off heat. Set aside. Make dressing by whisking together 1/2 cup olive oil, 2 tsp Calabrian chili paste, 2 tsp lemon zest, juice of 1 lemon, 2 tbsp honey, 1 tsp salt. Set aside. Assemble salad by putting roasted veggies in bowl, then add shrimp, dates, almonds, and grate fresh pecorino Romano on top. Drizzle dressing evenly over salads. Healthy crispy chicken tenders & fries!🍗🍟 I think that one of the biggest keys to healthy eating is to make healthier versions of the foods that you LOVE so that you can eat them whenever you want! These air fried crispy chicken tenders and sweet potato fries really hit the spot - they are sooo delicious and easy to make! 🙌 I made this for 2 people but you can adjust the amount of sweet potatoes and chicken you make! 🍟 Sweet potato fries: - 4 sweet potatoes - 1 tbsp olive oil - 1/2 tsp each: paprika, garlic powder, salt, baking powder - 1/4 tsp pepper Preheat oven to 425. Slice the potaotes into long fry shapes. Add them to a big bowl and toss with olive oil and all the spices. Spread into a lined baking sheet and bake for 25-30 mins, tossing a few times while cooking. 🍗 Chicken tenders: - 5 chicken tenders (or slice chicken breast into long strips) - Salt & pepper - 1/2 cup breadcrumbs or panko - 1/2 tsp garlic powder - 1/2 tsp paprika - Olive oil spray (OR 1 beaten egg - I ran out!) Season both sides of the chicken with salt and pepper. Add the breadcrumbs to a shallow bowl with garlic powder, paprika, and a little salt and pepper and mix to combine. Lightly spray both sides of the chicken with olive oil OR dip in beaten egg, then coat both sides in breadcrumbs. Add to air fryer basket in a single layer and spray tops with oil. Air fry at 400F for 12 mins flipping halfway. Easy to make 468 calories and 37g protein each perfect for a weekend dinner recipe 😏✅ Add to your favs besties 💅🏼📌 Ingredients (serves 2): 250g lean beef steak mince Tsp onion granules Tsp garlic granules Salt Pepper White onion small diced 20g ranch sauce 20g fat free natural yoghurt 1/2 tsp chilli paste (can sub for a tsp hot sauce) 15g light butter Tsp garlic puree 1/2 tsp parsley 2 cheddar cheese slices reduced fat (40g) 💗Mix together the ranch sauce, natural yoghurt, chilli paste and set to one side. 💗Season the beef mince with the onion granules, garlic granules, salt and pepper. Combine well and form into four equal balls. Squash down before pan frying.
