my version of the green goddess salad 💚 recipe: ½ cabbage ½ cucumber 1 spring onion 5 g chives 100 g spinach 1 avocado 15 g chives 10g basil 1 shallot ½ lemon juice 10g parmesan 100g pine nuts or macadamia nuts salt & pepper 1 jalapeño 2 cloves garlic 150-300 ml water Tortilla chips Method: 1. Cut your cabbage in 4 pieces. Use a mandoline to cut the cabbage in small strokes. Cut the cucumber in small cubes (around 0,5 cm). Chop the sping onion and chives. 2. Place the cabbage, cucumber, spring onion and chives in a salad bowl. 3. Add the spinach, avocado, chives, basil, shallot, lemon juice, parmesan, nuts, jalapeño and garlic to a blender. Add 100 ml water, blend, add more water until it’s a smooth sauce. 4. Add the sauce to the salad bowl, mix and dig in with some chips.
