Fortune cookies🥠 3/4 Cup Sugar 3 egg whites (room temp) 6 Tablespoons Butter (melted) 1/2 teaspoon vanilla extract 1/4 teaspoon almond extract 3/4 Cup AP Flour Pinch of Salt 1. Preheat oven to 350f. Combine sugar and egg whites into a bowl, whisk until slightly frothy. 2. Add in melted butter, mix, then add remaining ingredients. Whisk until smooth. 3. Prepare fortunes or notes, ahead of time and grab a glass or cup to shape the cookies. I also use a cupcake tin to put them in while cooling to hold their shape. 4. Spoon about 1/2-3/4 Tablespoon of batter on a parchment lined pan and use the back of your spoon to shape it into a thin 3-3 1/2 inch circle. I only do about 4 at a time on a pan. 5. Bake cookies for 6-8 minutes until browned edges. I flip the pan halfway through for a more even bake. 6. Take out cookies. Working quickly take a warm cookie off the pan, place your fortune in the middle, fold over like a taco without pressing down the dough and use your cup to gently indent the middle to create your cookies shape. Place in muffin tin to cool and hold shape. 7. I cannot stress enough having things ready when the cookies come out. Baking only 4 at a time will allow you to form all of them without becoming too hard to form and breaking, but you still have to work quickly. 8.
