Slice your chicken sausage and sauté on medium high heat until golden. Cook your protein pasta. In a blender add 1 cup of low fat cottage cheese, salt, pepper, Italian seasoning and blend until smooth. Add your favorite pasta sauce to the sausage and stir in your blended cottage cheese. Mix in your pasta and top with mozzarella. 10 MINUTE ONE-POT HEALTHY ORZO recipe 🍝 . This is the perfect quick and easy dinner or meal prep that the entire family can enjoy! . Ingredients: 1 tbsp olive oil 3/4c red onion 1tbsp minced garlic 1 can chickpeas rinsed and drained 2c cherry tomatoes 1c diced zucchini 16 oz orzo 5 cups water 1c frozen peas 2c chopped spinach 22oz pre cooked chicken (I used the pollo asado from Just Meats) . Instructions: 1. In a large pot on medium heat, sauté onion, garlic, tomatoes, zucchini and chickpeas for a few minutes. 2. Pour in the orzo and water 3. About halfway through cooking add peas, spinach & chicken 4. This should take about 10 minutes! Taste orzo when the liquid is absorbed and make sure it’s tender to your liking. 5. This HONEY - LIME chicken is the perfect weeknight dinner to add to your rotation🍋‍🟩🍯 Ingredients: 1 chicken breast thinly sliced Seasoned with: Paprika Chili powder Salt & pepper 1 lime juiced 2 tbsp honey For the Cucumber & Avocado Salad: 1/2 cucumber quartered 1 avocado cubed 1/2 red onion sliced 1 tosp honey Salt & pepper to taste 1 lime juiced Minced cilantro For the sides I made white rice and added 1/2 cup to my plate and approximately 1 cup of shredded lettuce. This dinner was SO good I can't wait for you to give it a try 🙌🏼 Notes: slice chicken breast. Season the chicken. On a medium pan on (medium heat) add 1/2 tbsp avocado oil then add chicken once the pan is very hot. Cook for about 3-4 minutes until no longer pink. Turn heat down then add lime juice and honey. Allow for it to simmer for another 3-4 min or until sauce turns thick in texture. For the salad cut the veggies add all into a bowl and mix well. Spray two slices of bread with olive oil spray. Season both sids with sea salt. Place olive oil side down on a pan. 2. Top one slice with cheese, turkey, greens and the other with mustard, yogurt, and more sea salt. 3. Toast over the stove until the bread is lightly browned. Close the sandwich and continue cooking on low/medium heat until the cheese is melted 4. While the sandwich is toasting, prepare veggies on the side. 5. Plate and enjoy!
