Crack Chicken Pasta 8 oz Rigatoni 2 large chicken breasts(cubed) 1/2 bacon 1/2 cup whole milk 1/4 cup heavy cream 2 oz room temp cream cheese 4 oz sour cream 2 oz cheese dip 2 oz shredded Colby Jack cheese 1 Tbsp Ranch seasoning 2 tsp garlic powder 1.5 tsp smoked paprika 1 tsp black pepper 1 tsp onion powder Cut up bacon and cook on med heat. While bacon is cooking cube up your chicken and season with SPG, and paprika. Remove bacon once crisp and cook chicken in remaining bacon grease until it reaches 165° internal then set aside. Turn heat to med-low, add milk, heavy cream, cream cheese, and sour cream. Stir until cream cheese melted then add cheese dip, seasonings, and shredded Colby Jack. Taco Tater Tot Casserole is an easy dinner recipe my family loves! INGREDIENTS 1 lb ground beef 1 chopped onion 1/2 tsp each salt and pepper 1 tsp each of cumin, dried cilantro, 2 tsp chili powder 1/4 tsp cayenne 1 can corn (drained) 1 can Rotel Diced Tomatoes & Green Chiles (not drained) 1 cup sour cream 2 cups shredded Colby Jack Cheese Tater Tots or Crispy Crowns Buffalo Wild Wing’s Southwest Ranch INSTRUCTIONS Brown one lb of ground beef with a chopped onion in a skillet over medium high heat. Once browned drain grease and season with salt, pepper, cumin, dried cilantro, chili powder, and cayenne. You could use a taco seasoning packet instead of these seasoning if you would rather do that. Add one can of drained corn, one can of Rotel (not drained), 1 cup sour cream, and about 1 cup of shredded Colby Jack cheese. Stir everything together well. Top with one more cup of shredded cheese. Top with tater tots or the crispy crowns. I didn’t quite use the whole bag. Bake at 400 degrees for about 35 minutes or until the tater tots are cooked to your liking. You can also broil the tater tot casserole for a few minutes to help the tots get crispy. Top with Buffalo Wild Wing’s Southwest Ranch. Enjoy! Let me know if you try it out! This had a little kick of heat, but my kids both still ate it. #sponsored Foil Packets are a family favorite dinner all summer long! @Texas Roadhouse INGREDIENTS 1 lb ground beef Steak seasoning Texas Roadhouse Gold Sauce 4 potatoes 1 onion 1/2 bag baby carrots Olive oil Shredded Colby Jack cheese INSTRUCTIONS Form ground beef into 4 equal size patties. Wash and chop potatoes into cubes. Chop an onion. Slice baby carrots in half. Lay out a couple of pieces of aluminum foil. Add one chopped potato, a handful of onion and some baby carrots. Drizzle a little bit of olive oil over the veggies. Season with a little bit of steak seasoning. Top with a burger patty and season with a little bit more steak seasoning. Top the burger with a drizzle of Texas Roadhouse Gold Sauce. Wrap aluminum foil up tightly. Repeat until all 4 foil packets are assembled. Heat a grill over medium heat. Place foil packets on the grill and cook for about 20-25 minutes or until the ground beef is fully cooked and the veggies are tender. Carefully open the foil packet and add some shredded Colby Jack cheese. Place back on the grill to melt the cheese if needed. Chicken taquitos! My 3 and 5 year old had chicken nuggets and raspberries. I almost didnt post this because my kids were arguing over the gaming system and the fan to it was on, but that is real life and I try to keep it just that! Recipe: Use whatever desired chicken. Rotisserie is great, I cooked 4 chicken breasts in a crockpot with a little chicken broth for moisture, cumin, chili powder, garlic powder, salt and pepper on high for 4 hours. Shred your chicken and place in mixing bowl. Add 8oz cream cheese 2 cups colby jack cheese 15oz green enchilada sauce Juice of 1 fresh lime 1 bunch of cilantro chopped 1 bunch of green onions chopped 1tsp cumin 1tsp chili powder 1tsp garlic powder Mix until combined. Preheat oven to 375 Fill tortillas with chicken mixture and roll up. Place on a baking sheet with parchment paper and spray taquitos with cooking spray. Bake 15-20 minutes and enjoy!
