Sauté carrots and ginger until fragrant, then add the rest of the ingredients and rice cakes at the end before serving.

This cold cucumber soup is called “Tarator” in Bulgaria. You may also know it as “Cacik” (pronounced JAH-jek) in Turkey, or Tzatziki in Greece. The only difference between Tzatziki and Tarator is that we make ours with grated cucumber, yogurt, garlic, olive oil, dill, salt, and add cold water to thin it out. Tarator is a staple in Bulgaria that can be found on the menu in every restaurant, especially during the summer. It pairs perfectly with any grilled meat, fish, veggies, cevapi, or on it’s own on a hot summer day. It has to be chilled in the fridge before serving or some people like to add additional ice if serving right away. Happy British heatwave! ☀️ Let’s cool ourselves down with Šaltibarščiai - a cold beet soup or more widely known as the Lithuanian pink soup. 🩷 Made from fresh ingredients including kefir - a drink containing millions of live cultures that are sooo good for your gut health, not to mention plenty of protein and antioxidants.👌🏻 🌿 Ingredients (serves 5-6): kefir (1 litre x 2), cooked beetroot, fresh dill, batch of spring onions, bag of baby potatoes and eggs (1 per person). 👨🏻‍🍳 Preparation (25 mins): Pour kefir in a soup pot, squeeze some beetroot juice from the vacuumed bag before chopping them into small pieces. Same with cucumber, spring onions and dill. 🔪 Then mix everything together, add some salt for taste and let the soup chill in the fridge for a few hours to let the flavours flourish. 🧂 While the soup is chilling, chop the baby potatoes, mix them with oil, seasoning (salt, pepper and thyme) and let it cook in the oven for 30 mins or until it’s crisp and golden. 🥔 Also, hard boil the eggs for 15 mins before cutting them into halves and adding some salt with pepper. 🥚 🥣 Once the soup is ready, just add some eggs, potatoes on the side or in the soup itself and voila! 👌🏻 What do you think? #šaltibarščiai #coldbeetrootsoup #pinksoup #lithuanianfood #coldsoup
