Follow for more plant-based recipes and tips. **Ingredients: - 1 1/3 c Almond Flour - 2 tbsp Coconut Flour - 1/2 tsp Baking Soda - Pinch of Salt - 1/4 c Coconut Oil, melted - 1/2 tsp Almond Extract - 1 tsp Vanilla Extract - 1/3 c Maple Syrup (room temp) - 16 Almonds **Directions: 1. Whisk together almond flour, coconut flour, baking soda and salt in a large bowl.  2. In a separate medium bowl, whisk together coconut oil, almond extract, vanilla extract and maple syrup. Add wet ingredients to dry ingredients and stir together. 3. Refrigerate for 30 minutes. 4. Preheat oven to 350F and line baking pan with parchment paper. 5. Using a small cookie scoop, scoop 1" balls onto pan, spacing them out about 2 inches. 6. Gently press one almond on top of each cookie. Bake for 15 minutes. 7. Let cool for 5 minutes and move to wire rack to cool completely. Whip the egg whites and sugar, then add vegetable oil, water and flour. 3. With a tablespoon measure, spoon the batter onto the parchment paper and spread it out into an even 3 inch circle.  4. Bake the fortune cookies for 7-8 minutes, until the edges brown slightly at 180°C. 5. When each batch of fortune cookies finishes baking, remove them from the oven and quickly flip the circle over, and fold your fortune cookie in half.  6. Place the cookie in a muffin tin to let it cool and hold its shape. Repeat with the remaining batter and enjoy!
