I simply scored the fat, seasoned it well with salt and let it sit at room temperature for an hour. It was cooked it at 275°F for about 5 hours until it reached an internal temperature of 122°F. Patted dry, then seared over hickory wood for about 90 seconds per side.
After a 15 minute rest, the steaks were sliced and served family style.
