Here's what you'll need:
1 pound dry elbow pasta
1 (12-ounce) jar red pepper and eggplant dip (Ajvar)
8 ounces whole milk cottage cheese
1 ounce grated fresh Parmesan cheese
kosher salt and black pepper
Extra-virgin olive oil, for serving

Make it:
Cook pasta, according to package instructions, in boiling salted water until al dente. Reserve 1 cup pasta cooking water then drain.
Meanwhile, in a food processor, process red pepper dip, cottage cheese and Parmesan until smooth; season to taste with kosher salt and black pepper.
In a large bowl, toss pasta and sauce together, adding splashed of reserved pasta cooking water and olive oil until creamy and silky smooth. Season to taste with salt and pepper. Top each serving with a drizzle of olive oil.

Melt a couple tablespoons of butter in a large cast-iron skillet over medium heat. Add about 1/2 cup raw pecans, 3 sliced cloves garlic, and 2 teaspoons cumin seeds. Cook, stirring frequently, until pecans, garlic and cumin is toasted, about 4 minutes. Transfer to a bowl and sprinkle with flaky sea salt. Allow to cool, then roughly chop.

Wipe out skillet then add another 2 or three tablespoons of butter. Melt over medium heat; arrange halved eggplants, cut side down, in skillet and cook, without moving until they’re nice and golden brown, about 3 minutes. Stir eggplant and continue to cook until lightly browned all over, about 2 more minutes.

Remove skillet from heat and drizzle honey over eggplant. Top with chopped toasted pecan mixture, 5 chiffonade basil leaves, a dash of white wine vinegar, and flaky sea salt.

for one Mai Tai:

In a cocktail shaker filled with ice, combine:
2 ounces Caribbean aged rum
.75 ounce fresh lime juice
.5 ounce orgeat
.5 ounce Velvet Falernum liqueur
3 dashes angostura bitters

Shake to chill then pour into a rocks glass, add ice as needed, and garnish with an inverted juiced lime half, a bunch of mint and two Luxardo cherries.
