How to make MANGO CURRY 🥭would you make this?👇

👉This curry is soooo easy and tasty! Simply blend up some mango (you need 1 cup of purée) and stir it into your coconut milk curry mixture. I added lots of fish sauce and lime to balance the sweetness of the mango and it was incredible. Recipe (with a vegan version) coming soon to the WWL Program!

✅This curry can be refrigerated for 4 days and reheated in the microwave or on the stove! You can freeze it as well for up to 6 months.

TIPS TO MAKE MEAL PREP MORE EFFICIENT ✅
Here are the steps I use every time to organize myself on meal prep days. Meal prep doesn’t have to suck up the entire day! I always recommend planning on shopping on different days - NOT the day you cook, too.
On cooking day
1. Get your kitchen clean, start with an empty dishwasher
2. Get your recipes/write down what you’re cooking
3. Get out all your ingredients
4. Marinate any meats or proteins
5. Chop everything you need for your recipes
6. Start cooking whatever takes longer (one pot meals, oven meals)
7. Then cook whatever takes less time (quick stir fries, salads)
8. Let food cool down while you take a break
9. Clean
10. CELEBRATE!! Get take-out, go get a mani, enjoy a Love Island binge-session - whatever it is you need to do to chill out after your cooking sash.

When you salt raw tomatoes before using in salads, sandwiches, burgers, etc, the tomato flavor becomes concentrated and some of the juices are drawn out.
This helps us happily use tomatoes in meal prep recipes without the dish getting too watered down or soggy! Let us know if you have tried this before and how you like it!

-I have tons of meat, grains and pantry items at home to use. I stock up about 2-3 times per year on these and I cook every week. And yes, I have the space for it which helps!
Truly the 2 most important things that help me consistently keep grocery costs low Are in the post: meal planning + shopping my pantry. Without these 2 approaches, I’d be spending way more.
