This chicken and bacon gougere is a great starter or main course.
Start by frying off half a packet of smoked lardons with a little oil, then add 2 minced cloves of garlic and a sliced onion. Once softened, add 175g sliced mushrooms, and when starting to brown, add 2 diced chicken breasts. As the chicken starts to cook, add 2 tbsp plain flour, 1 tbsp Dijon mustard, and then deglaze with 4 tbsp sherry. Add in 250ml of chicken stock, and then a large pinch of dried oregano. Once the mix has thickened, add 4 tbsp cream, then fold in a large tablespoon of our smoky onion relish.
Set the meat mixture aside to cool while you make your cheese choux pastry.
Start with 85g butter melted in 220ml water. As soon as it comes to the boil, take off the heat and shoot in 110g of plain flour. Stir quickly to form a dough ball, then beat in 3 beaten eggs. Fold in 50g cheddar, then set aside while you put the dish together.
In a lightly greased dish, spoon the choux pastry around the outside, then in the middle, pile up your chicken filling. Sprinkle breadcrumbs on the pastry and a little more cheese, then bake in the oven at 200C for about 40 mins, or until puffy and golden brown.

This crispy Korean style cauliflower uses a 50/50 mix of rice and cornflour. I then add 1tsp baking powder and make it into a batter with ice cold water.
