Creamy Baked Olive & Caper Spread | full recipe 👇🏾
•Bake bulb of garlic at 375° F for approx 1hr
•Bake 3-4 slices of lemon for 45 min
•Bake 2 Tbsp cappers (salt packed or brined), 1 cup pitted green olives, and a thick ½” slice red onion for 50 min at 375°F
•1 fresh cloves garlic
•¼ cup pistachios (soaked to soften)
•¼ cup raw cashews (soaked)
•½ cup water
•2-3 Tbsp white wine
•⅓ cup olive oil + 2 Tbsp
•½ tsp cracked black pepper
•2 tsp agave nectar or maple syrup
•½ tsp chile flakes
•1½ Tbsp lemon marmalade
•¼ cup chopped fresh coriander leaves (after sauce is blended)
•1 Tbsp fresh lemon juice
•1 tsp kosher salt
*Cool everything before blending
Put all ingredients into a blender. For a coarser consistency don't blend as much. For smoother consistency blend just at 1 minute. Add chopped coriander and season to tast spread will thicken slightly as it chills.
Perfect for: Dips, spread on sandwiches, dressing (Caesar salad), crusting tofu, lasagna or stuffed pasta... enjoy

Apple wood smoking vine ripened tomatoes in the Cru 32 for my smoked tomato sauce
Ingredients:
- 8 vine-ripened tomatoes, peeled and deseeded
- 1 bulb of garlic
- 1 purple onion
- 1 red bell pepper
- sprig of rosemary
- 6 fresh basil leaves (add to sauce while it cools then remove)
- 1½ tsp Calabrian chili flakes
- 1 tsp ground black pepper
- 2-3 tsp flaky salt (less salt if using smaller crystals)
- ¼ cup olive oil (for sautéing the onion, pepper, and garlic)
- (optional) 1 cup crushed San marzano tomatoes

Instructions:
1. When removing the seeds from the tomatoes, save every drop of liquid to add to the pot.
2. In a large pot, heat the olive oil over medium heat. Add the chopped purple onion, red bell pepper, and garlic (minced) to the pot. Sauté until the vegetables are softened.
3. Add the peeled and deseeded tomatoes, sprig of rosemary, basil leaves, Calabrian chili flakes, ground black pepper, and flaky salt to the pot.
4. Pour in 1 cup of water and simmer the sauce for 45 minutes with a tilted lid.
5. Blend the sauce to your desired consistency.
6. While the sauce cools, add the fresh basil leaves and remove them later.
