Arroz Con Leche Recipe
Ingredients:
2 cups extra long grain rice
2 cinnamon sticks
Lemon peel (3 medium pieces)
3 cups water
1/2 gallon milk
2 cans of evaporated milks
1 can of lechera
1 tsp vanilla extract
1/8 tsp salt
Ground Cinnamon (Optional)
Chopped Walnuts (Optional)
Raisins (Optional)
Instructions:
Give your rice a quick rinse to clean it but don't overdo it because we need the starch! Add your clean rice to a pot; add cinnamon sticks, lemon peel and 3 cups of water. Once it reaches a boil cover on low for 15 minutes or until rice has fully cooked. Add milk, evaporated milk, lechera, vanilla extract and salt to a pot until hot (don't let it boil). Add milk back to the cooked rice and constantly mix on medium low heat until it reaches your desire consistency. (don't forget to remove cinnamon stick and lemon peel). Top and enjoy with ground cinnamon and walnuts! You can add raisins too but I'm not a big fan of them!

2 ramas de canela
Cáscara de limón amarillo (3 trozos medianos)
3 tazas de agua
1/2 galón de leche
2 latas de leches evaporadas
1 lata de lechera
1 cucharada de extracto de vainilla
1/8 cucharadita de sal
Canela molida (opcional)
Nueces picadas (opcional)
Pasas (opcional)
Instrucciones:
Enjuaga rápidamente tu arroz para limpiarlo, ¡pero no te excedas porque necesitamos el almidón! Agrega tu arroz limpio a una olla; agrega las ramas de canela, la cáscara de limón y 3 tazas de agua. Una vez que hierva, cubra a fuego lento durante 15 minutos o hasta que el arroz esté completamente cocido. Agrega a una olla la leche, la leche evaporada, la lechera, el extracto de vainilla y la sal hasta que esté caliente (no dejes que hierva). Vuelva a agregar la leche al arroz cocido y mezcle constantemente a fuego medio bajo hasta que alcance la consistencia deseada (no olvides remover las canelas y la cascara de limon). ¡Cubra y disfrute con canela molida y nueces! ¡También puedes agregar pasas, pero no soy fan de ellas!
