Ingredients
• 350g potatoes (2 wah)
• 100g/1 cup finely sliced onions
• 100g or half a Zucchini
• 25g or 1/4 cup finely chopped coriander
• 1 tsp cumin powder
• 1 tsp ground fennel seeds
• Juice of half a lemon
• 1 finely chopped red chilli
• 1/2 cup chickpea flour (Besan)
• 1/2 cup oil for shallow frying
• Sliced cheese (made with plants)
• Salt to taste
Was the potatoes and zucchini thoroghly. Grate the potatoes and zucchini. Mix in 1 tsp.of salt and leave for 2 minutes in a bowl. Squeeze the mixture between your hands tightly to take the excess moisture out. Add all the remaining ingredients and mix well. Add a few drops of water if the mixture is too dry. Tatse and adjuat salt.
Gently, form the mixture into the shape of burger patties and keep them in the fridge for 10 minutes.
Heat up the oil in a large non-stick frying pan.
Take the patties out and cook o medium-low heat until crispy and golden brown. Flip them over, place cheese on each patty, and cook the other side. Cover with a lid to melt the cheese.
Assemble the burger as per your liking.
I used mint and yoghurt sauce, BBQ sauce, mayo, pickled onions, and tomatoes.
