This 1800s soup is called Skink soup. The stock was originally made with a beef joint, with the beef then being cut up and added to the soup at the end. However, we make it with vegetable stock and add red split lentils. It is basically a soup to use up vegetables. Veg such as kale and onions can also be added. The soup freezes well 😊
Ingredients
2 pints vegetable stock
1 cup of red splint lentils
1 leek sliced and washed
1 small swede or turnip, peeled and cubed
2 medium carrots, peeled and cubed
1 cup of garden peas, fresh or frozen.
Bring the stock to the boil and add the lentils. Bring back to the boil and then add the vegetables. Give the soup a good stir, bring back to the boil and then simmer for 1 and a half hours.
Serve as is or blitz to a smooth soup as we have done.
Add salt and/or pepper to your taste and serve with a rustic bread such as soda bread or sour dough.
