My go-to girl dinner is the national dish of Spain 🇪🇸 and one of my all-time favs: Tortilla Española or Spanish Omelette. If you didn’t already know, I am a huge foodie who loves to cook and explore all sorts of cuisines, especially those that are part of my heritage, of course! This is such a quick and easy meal that’s sooooo gooood!
Here’s a quick run through (not a recipe but you’ll get the gist). Heat up a nonstick skillet on med-hi, add a generous amount of olive oil. Add frenched onions (thinly sliced lengthwise) and saute until translucent. Add sliced potatoes and cook through - season with salt to your liking. Crack a few eggs in a separate bowl and break up the yolks without scrambling them.
Once the onion/potatoes are cooked, drain them and save that oil (its now flavored with onion-y goodness to use in another dish). Add the drained warm onion/potato mixture to the eggs, season, stir and leave alone for a minute or two (trust the process - Spaniards been doing this forever).
Then add the whole egg mixture back to the nonstick skillet and cook until the eggs start to set. Flip at your own risk 😂 or find a plate to flip onto and slide back into the pan to cook the other side.
Easy “aoili” can be as simple as adding garlic, lemon, and parsley to mayo. Or do what I did and add Spanish smoked paprika and garlic to mayo for a super tasty accompaniment to the tortilla!

Andrés Zuzunaga is the founder and director of Cosmograma in Barcelona, Spain. He created the Venn Diagram of Purpose in 2011. A few years later, some TED talker mixed it up with Ikigai, a Japanese concept that dates back to the Heian period (794 - 1185 AD) and we’ve all been in a spiraling diagram of confusion since then. This diagram has nothing to do with Ikigai … AT ALL. It’s driven me nuts for years, and I finally saw one too many misinterpretations that I had to make this video. And I even left out the four subcorners of passion, mission, vocation, and profession! I didnt even explain 💯. It’s Zuzunaga’s brain child.
