These healthy creamy chickpeas have been on my page for 6+ years. They are one of the most popular and requested recipes so I love re-sharing them whenever I get the chance. Recipes like this one are very common in Indian cuisine (and other parts of Asia) so this is my fun NON traditional take on Chana Masala. You can absolutely season to taste and season with your heart with anything you desire so feel free to add as much or as little seasoning as you wish. 2 cups of cooked jasmine rice (or any rice you enjoy)
1 tablespoon of avocado oil
1 small finely diced onion
3 minced garlic cloves
1.5 cups cooked chickpea’s (or a 14 oz can)
⅓ cup tomato sauce
the cream that sits on top of a can of coconut milk (3 or 4 tablespoons)
salt and pepper to taste
1/2-1 teaspoon turmeric powder (I measured with my heart)
1 cup finely chopped spinach is optional
parsley or cilantro for garnish is also optional

These Bulgarian meat and cheese sandwiches are the ultimate meaty and cheesy comfort food. You can find many versions of these baked sandwiches on every corner in Bulgaria. These sandwiches are called “Prinzesi” in my language which translates to princesses. These grilled Bulgarian ground meat and cheese sandwiches are part of my most nostalgic memories. If you ever find yourself in Bulgaria, be sure to look out for these on almost every corner. We have many different kinds including baked ham and cheese sandwiches, egg-feta-cheese toast sandwiches, just cheese, and various versions. One thing all of these recipes have in common is that they are typically served for breakfast and are baked in the oven.

This is the easiest rice pudding which will forever feel like home to me. This creamy rice pudding recipe or as we call it “mliako s oriz” is a staple in Bulgaria which brings the fondest memories. I vividly remember being served rice pudding as an after-nap snack in kindergarten. The teachers would rotate between rice pudding and semolina pudding which was always the best treat. Isn’t it funny how we can remember something so vividly from such a young age? The smallest gestures often make for the fondest memories, and it’s a feeling that I will forever hold close to my heart. This is my creamy chicken skillet dinner with the best cashew cream sauce and button mushrooms. This recipe will be your go-to weeknight meal as it takes 25 minutes from start to finish and all done in one skillet. The mushrooms are interchangeable and can be substituted or left out completely for those that don’t enjoy them. I like using button mushrooms for this recipe as some of family members don’t like mushrooms. They won’t change the flavor of the sauce if left whole and you can easily separate them if needed when serving to someone who doesn’t like them. I serve this dish over fluffy jasmine rice but it would be delicious over mashed potatoes or on its own as well. The easiest BEST No-Knead Focaccia. Focaccia is a traditional Italian bread that traces back to the second century BC. Focaccia is also one of Italy’s most ancient breads and thought to have originated with the Etruscans. From all my research, the dough back in the day was made from flour, salt, water, flattened over a stone slab, and cooked under hot ashes, hence its Latin name, Panis Focacius which means “hearth bread.” The recipe has then evolved and is now most commonly made with yeast and olive oil. Focaccia seems to be most closely linked to Genoa, where it’s known as pizza Genovese and topped with sautéed onions and herbs. Around Bologna it’s known as Crescentina, and in Tuscany and parts of central Italy it becomes Schiacciata. The best-known forms of focaccia have a golden, dimpled, slightly salty crust and a soft center. However, texture varies according to region, and the flavors will vary with ingredients. This no knead focaccia recipe is for the most novice baker and requires minimal effort. If you can stir a few ingredients in a bowl, you are capable of making one of Italy’s most delicious foods.

This oven baked rice casserole is a modern take on a traditional Bulgarian dish called “Drob sarma”. Drob sarma is a main course popular in Bulgaria and other Eastern European countries made with chopped liver (and other organs) baked in the oven with rice, scallions. spinach, mint, and which gets baked, covered with a creamy mixture and baked again. Since a lot of people may find the traditional version off-putting we decided to bring you a oven baked rice casserole with veggies instead! The traditional version of this dish is typically enjoyed on Easter or St. George day which is May 6th. It symbolizes the end of winter, and beginning of new life.

The Rice Filling:
¼ cup avocado oil (60 ml) or any oil
3 washed and finely chopped leeks or yellow onion (300 grams)
2 peeled and grated carrots
1 small container finely diced button mushrooms (200 grams) optional
1 small pack of frozen thawed spinach (500 grams) or fresh
1 cup of washed jasmine rice (200 grams)
salt and pepper to taste
5 finely diced green onions
3 finely chopped garlic cloves

On Feb 12, 2021 I decided to post my grandmas 3 ingredient no knead peasant bread. I hit the publish button on TikTok not realizing I would wake up to 15 million+ views. I couldn’t believe that a bread as simple as this would become a trend and everyone on the internet would start sharing it. Truth is, she was my best friend for 32 years of my life and someone who filled my heart with more love than anyone on this planet. Although I lost my best friend on Nov 13 2020, she is someone who has made a forever imprint in my heart. This bread was called “selski hliab” in my language which translates to “village or peasant bread”. My grandma was also one out of ten children who worked tirelessly to provide for her siblings, and family. When you come from a poor country, or don’t have as much, you know you can always rely on a few basic ingredients such as flour, salt, water, and yeast. If you had these few staples, your bellies were always full, happy, and you were able to feed a lot of people on a very modest income. Bulgaria was also under communism from 1994-1989 so many ingredients weren’t as available to us but a fresh loaf of baked bread was something that will forever be cherished in my family. This overnight peasant bread has been shared with so much laughter, tears, and holds some of the best memories of my life. Although there are many peasant bread variations, I hope this one brings you as much joy as it has to me.

I can’t think of anything better than sugo and sugo Sundays! Sugo, also known as authentic Italian tomato sauce is a staple in every Italian household. If a big pot of sugo isn’t on the table every Sunday in my family, it’s just not the same. Sometimes we make the sauce plain and use it for soups, stews, lasagna, rollatini or any dish that requires tomato sauce. Other times we make it with Osso Buco (veal shanks), meatballs, ribs, breaded cutlets, or any other type of meat. The sauce simmers slowly for a few hours until the meat is tender and melts in your mouth like butter. In this recipe I show you how we make our traditional Italian Sugo with Osso Buco which I know you’ll fall in love with. If you’re vegetarian, feel free to leave out the meat and make it plain as we often do as well which is the perfect for your favorite pasta, pizza, gnocchi, and more. This traditional Italian tomato sauce has passed down from Steve’s family (from Calabria). I hope his Nonna Vittoria and Nonno Giovanni are watching down on us and we’re making them proud as we continue to carry on family traditions that have been around for generations in their family and many Italian families around the world. In my culture, there’s nothing better than Bulgarian stuffed peppers. Stuffed peppers are a traditional dish that can be seen in every Bulgarian household and every restaurant around the country. Being Eastern European, I have had my share of stuffed peppers from many surrounding countries and nothing has compared to our stuffed pepper recipe! Not only is the meat and rice filling drool worthy, we make our peppers with the most incredible creamy white sauce. The white sauce is optional for many but absolutely mandatory for me. The white sauce which we dip with bread is what makes this traditional dish unique. I was born and raised in Bulgaria so nothing brings me more pride and joy than when I share our culture with the world. Our beautiful little country doesn’t get put on the map as much so I want to make sure I bring awareness as much as possible. I know you’ve had Lasagna but have you had crepe lasagna rolls(crepe cannelloni)? My moms meat filled crepes with bechamel sauce and cheese are what lasagna dreams are made of. This savory crepe recipe is so good and you probably won’t be able to tell that they’re not made with actual lasagna sheets. This recipe was the best experiment and accidentally made by my mom right before Christmas. She went out to find cannelloni in Bulgaria but didn’t have any luck. She thought she could try using crepes, rolling them with meat and cheese and assembling similarly to lasagna. Little did she know, this was one of the tastiest meals she had ever made. Mom immediately called me raving about it and here we are now making it for the page. I was skeptical at first, but trust me when I tell you, this is one of the tastiest meals I have ever had. The soft crepes stuffed and oozing with cheese accompanied by the creamy bechamel makes this recipe the ultimate comfort food.
