Serves 2

Ingredients 🍃
• 1 tablespoon of olive oil
• 20 raw cashews (not roasted or salted)
• 1 garlic clove, crushed
• 1 small red onion
• 200g of chicken thighs, skinless and boneless, sliced into 1cm strips
• 1 small red pepper, cut into strips
• 2 handfuls of baby spinach, chopped
• 1 tsp of cornflour
• 1 tablespoon of light soy sauce (reduced salt)
• 1 tsp of white pepper

For the sauce:
• 1 tbsp of oyster sauce
• 1 tsp of dark soy sauce
• 2 tsp of fish sauce
• 1 tsp of maple syrup
• 3 tbsp of water

Method 🥣
1. Put the chicken into a bowl. Add the cornflour, garlic along with one tablespoon of soy sauce. Mix to combine and leave it to one side while you prepare the other ingredients

2. Mix all the sauce ingredients in a small bowl and set aside

3. Heat oil over medium heat in a wok or large frying pan. Add cashews and cook for 5 minutes until they become a dark golden colour and crunchy (yep, you might have to eat one to check!). Remove from pan and keep to one side for later

4. Add the chicken to the pan. Cook for 5 minutes until brown and cooked through. Remove from the pan and keep to one side on a plate

5. Add the peppers and onion to the pan and stir fry for 2 minutes. Add the chicken back in along with the sauce and white pepper. Allow it to bubble for a minute or two. This is not meant to be a very saucey stir fry. The cornflour on the chicken will help thicken the sauce and coat everything in a glossy tasty sauce

6. Add the spinach along with the cashew nuts and stir to combine. The spinach will wilt in a matter of seconds

7. Serve right away with rice or noodles
