Fresh Cherry Hand Pies with Caramelized Sugar Crust 🍒
Oozy fresh cherry hand pies with a satisfying crunch from a caramelized sugar crust.
I’m usually all about baking from scratch, but sometimes you end up with fresh summer fruit that needs to be used quickly. In this case, using frozen puff pastry makes these a snap to pull together!
You’ll need about 6 ounces of fresh cherries, some frozen puff pastry, egg wash and Demerara sugar for this recipe.

Cherry pitting hack!
You dont need a cherry pitter if you’ve got either of these at home:
Chopstick:
Pluck off the cherry stem and use the thick end of a chopstick to push the seed out
Reusable straw:
Pluck off the cherry stem and push the straw through. This is my preferred method as it works like a charm!
Just dont forget your apron, pitting even a small amount of cherries will turn your kitchen into a crime scene very quickly!

Strawberry Gin Campari Sour 🍹
A delightfully pink, refreshing cocktail perfect for a summer evening. A little bit sweet, a little bit bitter, with a luxurious creamy quality thanks to the aquafaba. (If you don’t have aquafaba, you can use 2 egg whites instead).
I like to make fruit-flavored simple syrups when I have produce that’s about to go bad. It’s a great way to capture the flavor while extending the shelf life.
In this case, I had macerated berries for strawberry galettes and ended up with leftover strawberry syrup after I drained the berries. It worked perfectly for this cocktail!
For 2 drinks:
3 ounces dry gin (I used Aviation)
1 1/2 ounces Campari
1 1/12 ounces fresh lemon juice
1 ounce strawberry simple syrup
1/2 teaspoon aquafaba powder + 1/4 cup water (or 2 egg whites)
Lemon peel, for garnish
For optimal deliciousness, freeze 2 coupe glasses until frosty.
Whisk aquafaba and water together in a small bowl. Add gin, Campari, lemon juice, simple syrup, and aquafaba mixture to a cocktail shaker or mason jar. Shake until combined. Add a handful of ice cubes and shake until thick and frothy, 20-30 seconds. Strain into your chilled coupe glasses and garnish with lemon peel.
Cheers!

Save the bananas - make banana cake! 🍌
It’s blasphemous in my house to let bananas go bad. If you’ve got overripe bananas on hand, make this delicious one-bowl cake. And yes, I do give my bananas a little massage before I peel them. That way, they pop out of the peel perfectly mashed already.
Sweet, salty, crunchy, soft, and chocolatey, this one layer cake with dark chocolate peanut butter ganache has it all - and it's simple to make. Perfect for a relaxing baking day at home.
Banana Cake:
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 very ripe bananas, mashed (about 1 1/2 cups)
4 ounces unsalted butter, melted
3/4 cup brown sugar
2 eggs
1/4 cup sour cream or plain whole milk yogurt
1/2 cup buttermilk
1 1/2 teaspoons vanilla
1/2 cup salted peanuts, chopped

Got a black walnut tree near you? Let’s make Nocino!!! 🌿
This is one of my favorite foraging recipes. Nocino tastes like winter magic — dark, sweet, and lightly bitter with a medley of warm spices. As a digestif, it’s meant to be sipped on its own after dinner, but it’s also great added to an Old Fashioned or Manhattan, or served on the rocks with a little bubbly water and a twist of lemon.
For 1 liter of vodka, you’ll need:
About 30 unripe black walnuts
1 1/2 cups of sugar
3 whole cloves
5 allspice berries
3 cinnamon sticks
1 star anise
1 vanilla bean, cut into small pieces
The peel from 1 lemon
1 whole nutmeg, cut into chunks
6 coffee beans
1 liter of vodka
Note: in this video, were making a double batch :)
Wash & pat dry the walnuts. Chop them into quarters (you might want to wear gloves - they can stain hands and clothes!)
Layer walnuts, lemon peel, spices and sugar in a large clean glass jar. Try to distribute the spices and sugar evenly, layering as you go.
Top with vodka, making sure the walnuts are completely covered but leaving just a little bit of space at the top so you can shake it up effectively. Give the whole thing a nice healthy shake and store in a cool dark place for 6-8 weeks. You’ll want to give it a good shake at least every few days while it’s infusing.
Strain the mixture and compost the nuts and spices. Pour the liquid into a clean glass jar and place back in a cool dark cupboard. Let it sit at least another month for the best flavor. The longer it sits, the more the tannins will mellow and smooth.
Cheers!

Dark Chocolate Peanut Butter Ganache 🍫🥜
1 1/2 cups heavy cream
1/3 cup creamy peanut butter
1/4 teaspoon salt
6 ounces bittersweet chocolate
1 teaspoon vanilla
Chop chocolate very fine; set aside in a bowl.
Heat cream, salt, and peanut butter on low, whisking until peanut butter is melted. Continue to cook on low until just BEFORE it starts to bubble - it will be too hot if you boil it!
Pour hot cream mixture over chocolate and let sit 1 minute. Add vanilla. Whisk, starting in the middle and working your way out to the edges as it starts to come together.
Use to frost/fill cakes, tarts, and cookie cups. Makes about 2 1/2 cups.
