Making our bagels a 2-day process. It starts off with a starter called Biga, sitting at room temp for 20 hours. After incorporating the rest of the ingredients with the biga, it sits in the fridge overnight.
Bagels are available this Saturday at @cnyregionalmarket! 7 am-1 pm.
