The sailors rotate at certain hours to alternate between being ON watch and OFF watch. This rotation is a crew decision and may be different in each boat.

On Malizia - Seaexplorer they switch it every 4 hours, one of the sailor always sharing 2 hours with another sailor and
2 with a different one.
