New! Triple Chocolate Muffins. #ad | In partnership with @Lifeway Kefir , I created triple chocolate muffins using their 1% Unsweetened Plain Lowfat Kefir.
These muffins are extra soft and fluffy thanks to Lifeway Kefir! This kefir is so creamy and rich. It makes these muffins perfectly moist. These muffins have a sweet balanced texture and are made with three types of chocolate. They come together in one bowl with minimal ingredients!

Makes 12 muffins
Ingredients
- 1/2 cup vegetable oil
- 1 cup Lifeway Kefir 1% Unsweetened Plain Lowfat Kefir (room temp)
- 2 eggs (room temp)
- 1 tbsp vanilla
- 1 cup light brown sugar
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsps baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup semi-sweet chocolate chunks
- 1/2 cup mini chocolate chips
Steps
1. Line a muffin tin with 12 liners (I like to bake them 6 at a time for a taller rise but this is optional).
2. Preheat oven to 375°F.
3. In a large bowl, whisk oil, kefir, eggs, vanilla, and brown sugar until smooth.
4. Add in sifted flour, cocoa powder, baking soda, baking powder, and salt. Using a spatula, fold until just combined.
5. Mix in chocolate chips and chunks.
6. Fill 12 muffin liners evenly to the top. Add extra chips on top if desired.
7. Bake for 15-20 minutes or until a toothpick inserted comes out clean of wet batter.
8. Cool the muffins for 10 minutes in the pan and enjoy!
