Fuss Free & No-Knead Foccacia 🥖🍞
Should I say that it is delicious? 🤤🤤
Only downside is that you need to wait for about a day for the dough but it totally worths! 😍
I normally start preparing the dough at 10-11am in the morning, so I can bake it the next day at the same time around 10am.
Ingredients for the dough:
10g active dry yeast
1/2 litre lukewarm water
1 tsp honey
1tsp olive oil
Pinch of salt
3 cups self raising flour
More salt and olive oil before baking.
Method:
1. Combine the water, dry yeast and honey in a big bowl. Wait for 10-15 mins.
2. Then add the olive oil, salt and flour. Mix very well using a spoon - I used a silicone spoon (much easier to clean afterwards 🥲)
3. Cover the bowl with stretch film or anything you have at home and works for you.
4. After about 20 hours, oil a suitable tray using a dash of olive oil.
5. Then lay out the dough, cover the tray with stretch film again. Wait for 2-3 hours.
6. Then, pour 3-4 tbsp olive oil and dimple the dough all over with your fingers, reaching all the way to the bottom of the tray.
7. Sprinkle some salt on top and bake in the preheated oven at 170 for 35 mins, or until the focaccia is golden brown.

Slow cooker beef with kale 🥩
Ingredients:
400-500g beef (I used Ribeye but you can use any cut - then you can adjust the cooking time accordingly ☺️)
An onion, roughly chopped
Pinches of salt and pepper
4-5 tbsp olive oil
A can of chopped tomatoes
100-200g curly kale (I removed the thick stems and chipped roughly)
Method:
1. Put everything except the kale in the slow cooker and cook for 3 hours at high. Depending on what cut of meat you use, you may increase the cooking time to 4-5 hours.
2. After 3 hours, shred the beef using two forks.
3. Then, add the kale and cook for another 40 mins.
4. I served mine with mashed potato and salad, enjoy!

Pistachio cream
Powdered sugar to sprinkle on top after baking the pastry
P.S. I used tiny amounts of the above ingredients, because we are only two people and didn’t want to waste anymore than we are able to eat 🥰 You can always increase and adjust the amounts according to your household!

Honey and Garlic Crispy Chicken 🍗

A clove of garlic, finely chopped
2-3 tbsp honey
1-2 tbsp soy sauce
2 pieces of chicken breast
1-2 tbsp cornstarch
Olive oil
A dash of chilli flakes
Method:
1. Chop the chicken up to bite-size pieces. Cover them with cornstarch and some olive oil. Cook them in the airfryer or oven until they are crispy.
2. When the chicken is ready, fry the chopped garlic with a dash of olive oil for a couple of minutes.
3. Then add honey and soy sauce, followed by the crispy chicken.
4. Make sure the chicken pieces are covered with the sauce, add some chilli flakes and mix well.
5. I served ours with some plain rice and sprinkled sesame seeds, green onions and red chilli peppers on top.

Ingredients for sautéed mushrooms:
500grams mushrooms
An onion
Olive oil
Pinch of salt
Ingredients for the hummus:
A can of chickpeas
A clove of garlic
1 tbsp olive oil
A pinch of cumin
A pinch of salt
A lemon’s juice
3 tbsp tahini
3-4 tbsp water
Method:
1. For the hummus, put all the ingredients in a blender and blend very well.
2. Chop the mushrooms and the onion.
3. Sauté the mushrooms first with some olive oil, then add the onion, followed by a pinch of salt. Sauté until everything is softened.
4. Serve as shown in the video, enjoy!

1/3 cup brown sugar
1/3 cup olive oil
About 3 cups oats
70-80 grams chocolate of your choice, chopped

1. Mash the banana in a bowl. Then add the orange juice, brown sugar and olive oil. Mix everything well.
2. Add oats and mix to form the dough. Mix in the chopped chocolate.
3. Form the cookies and bake in the preheated oven at 170C for 25-30 mins.

Milk or dark chocolate, use as much as you want 🤤 (I used about 75-80g)
1/2 tsp coconut oil
1/2 cup puffed quinoa
An orange’s zest
A pinch of salt
Optional: grated white chocolate to sprinkle on top.
Method:
1. Melt the chocolate with coconut oil.
2. Add the quinoa puffs, orange zest and salt. Mix well.
3. On a baking paper, spread the mixture thinly.
4. Sprinkle the grated white chocolate on top.
5. Refrigerate for a couple of hours and enjoy!
You can keep it in the refrigerator for quite some time but I guarantee you it’ll finish in a day 🤤
