Two zero waste coffee alternatives which taste great and are jam packed with health benefits!
**DANDELION COFFEE ☕️🌼**
- Harvest the dandelion plant.
- Use a hoe or a trowel to dig out the roots without damaging them too much.
- Cut off the leaves and flowers from the root, but remember to keep them as they make a great stir fry or salve (check out my previous videos).
- Wash the roots with a brush to get rid of the dirt.
- Cut them into small bits.
- Let them air dry for a few days or use a dehydrator (make sure they are completely dry).
- Roast at 160°C for about 20-30 minutes. Keep an eye on it; this step is important as it gives the root a nice flavor.
- Let them cool and grind finely with a coffee grinder, mortar, or blender.
- Use 3/4 teaspoon for a cup of coffee.
- It has a mild flavor.
- You can also add extra flavor to it with some cinnamon powder, vanilla, and cardamom for a lovely warming cuppa.
- Store in an airtight container for 3 months.
**DATES COFFEE ☕️🌴**
- Divide the pulp from the seed.
- Use the pulp for a date paste or store it in an airtight container.
- Wash the seeds and let them air dry for a few days or use a dehydrator.
- Roast in the oven at 160°C for about 20-30 minutes.
- Use a blender to grind into a fine powder.
- This powder has a very similar coffee aroma.
- 5 seeds make a cup of coffee.

Throughout the year we harvested many kilograms of tomatoes from our small urban garden in London.
It’s the perfect time to celebrate the harvest like we used to do with my grandparents in Italy elevating simple and delicious flavours.
*always pick tomatoes leaving the calyx (remnant of the flower) still attached as it will keep the tomatoes fresher for longer. You can throw them in the compost before using your tomatoes.
TOMATO SKIN POWDER:
- tomatoes skins
- Garlic powder
- Dry oregano
- Dry basil
STEP BY STEP:
1. Score your tomatoes with a knife and submerge in hot water for a few minutes
2. Cool down in icy water (or under running tap water) and peel off the skin
3. Dry at low temp in the oven, dehydrator or using sunlight if you are lucky with the weather (not my case in uk 😂)
4. Blend with the rest of the ingredients and store in a jar

•6 tbsp x olive oil
•4 tbsp x salt
•water for boiling
•2 cloves of garlic

🥣STEP BY STEP
-cut the lemon peels in small bits at least 10 times each half a lemon.
-in a pan cover the lemon peel with water and boil fir 20 min or until the skin is tender
-drain the water in to a bowl , add the water to a bottle and keep it for a lemonade or iced tea and let the cooked peel cool.
-once cooled mix in the salt, olive oil , garlic and your choice of herbs , give it a stir and store in to an airtight container in the fridge up to 2 weeks.
-you can add it to sandwiches, salad , blend in to a paste and make a vinaigrette just get creative .
🍋🍹LEMONADE
The leftover water from boiled lemons is great to have as is or with some honey,in iced tea , or have it hot in the morning with some ginger to help you hit and activate the good bacteria or simply make a lemonade adding some sugar.

•herbs -thyme,mint,sage and lemon balm
•flowers- violas
•lemon peels leftover
🥣STEP BY STEP
-cut the lemon peels in to very thin stripes
-add all the herbs and lemon stripes to a dehydrator for 3 hours at 40 degrees or until completely dry

-serve with hot water infuse for 4 minutes

An easy way to make more food out of your food by extracting syrup from strawberries and using the solids to create delicious flavored ice cubes, avoiding any waste.
*CHEONG🫙🍓*
• 400g fresh strawberries
• 400g unrefined sugar
• 2 fresh lemons
*drink 🍹🍓*
• cider
• Cheong
• Ice cubes
*INSTRUCTIONS🥣*
1. Dice the strawberries and the lemons.
2. Mix half of the sugar with the lemons and the strawberries, then fill the jar.
3. Press the mixture to the bottom of the jar and top up with the remaining 200g of sugar.
4. Place in the fridge for up to a week until almost all the fruits turn into syrup.
5. Once ready, strain the syrup and store it in the fridge for up to a month.
6. With the leftover fruit pulp, add them to an ice tray, top up with water, and freeze.
7. To create the refreshing and delicious drink, add 1 tbsp of Cheong to a pint, along with the fruity ice cubes, and top up with Inch’s cider 🍹🍓.

We finally grew some amazing cauliflowers in the garden weighting a total of 8.5kg. It took a few months, lots of care and it would be a shame to waste any part of it.
RAW CAULIFLOWER “RICE”:
•cauliflower head
•cauliflower leaves
•4 x tbsp olive oil
•herbs : thyme,parsley,oregano etc
•1 x onion
•2 x garlic bulbs
•salt & pepper
•1 x cup kimchi
•water optional
Instructions 🥣
-in a pan stir fry olive oil,garlic ,fine chopped onion ,herbs salt and pepper (you can add any flavour or extra vegetables for extra texture like red bell pepper or peas etc)
-once the stir fry is nice ,golden and ready turn the fire off and grate the cauliflower straight in the pan
-mix well and set aside (don’t cook the cauliflower)
-in the blender mix about 1 cup of pre-made kimchi (you can find the recipe in one of our last year reels)add a bit of water for a smooth consistency
-wash the cauliflower leaves and rub them with the kimchi sauce
-roast them in the oven for 15/20 min at 160C
-they should reach a great crispy texture and a soft stem
-for the best results use the you g leaves and the harder ones compost them
-serve your cauliflower rice as is or together with the roasted leaves

I’m not a big drinker so i always end up with beer or cider leftover from the previous night but even your leftover cider could be used to make something delicious and avoid wasting it after a night with friends!
RECIPE STRAWBERRY POPSICLES 🍡
BATTER 🥣
•300ml x cider
•250g x self-raising flour
•1 teaspoon x coconut sugar
•zest of a lemon
•oil for frying
FILLING 🍫
•200g dark chocolate
•sea salt
•20x whole strawberries
•powder sugar
•BBQ sticks
INSTRUCTIONS:
1.Wash the strawberries, keep them whole, pat them dry with a towel, and insert the sticks.
2. In a double boiler, melt the chocolate.
3. Dip the strawberries in the chocolate and sprinkle them with some sea salt.
4. Place them on baking paper in the fridge until set.
5. For a thicker chocolate coat, double dip them in the chocolate after the first dip is set.
6. Prepare the tempura batter by mixing your leftover apple cider or beer with flour, lemon zest, and coconut sugar.
7. Bring the frying oil to a boil, then lower the temperature slightly to prevent the pops from burning.
8. Once the coated strawberries are firm, dip them in the tempura batter and then into the frying oil.
9. Fry until golden.
10. Let them cool a bit and sprinkle with some powdered sugar.
(If the tempura is too thin, add some more flour. If it's too thick, add more cider, soy milk, or water a bit at a time.)

•p.based mince meat
•p.based baby bell

•100g x flour
•1 tsp x backing powder
•1/2 cup (or a bit more) p.b milk

📖 Instruction
-Cut the aubergine in long thin slices
-mix the mince meat with a bit of tomato sauce and spices and blend well until you’ll have a sticky mix
-spread the mince meat mix on the aubergine slice top it up with cheese and roll it tightly

I created a vertical garden that fits in any small space, allowing you to be more self sufficient and produce some of your own food.
MATERIALS:
1 x 12” plastic pipe
1 x tape measure
1 x sharpie
Hand saw or electric
12 x strawberry plant
Spray paint (optional)
Organic compost
STEP BY STEP:
- Measure and mark out spaces every 15 cm on your plastic pipe going from one side to the other (one mark left, one mark right and so on)
- Cut an horizontal slit on every mark around 10 cm wide
- Turn on your heat gun and carefully warm up the area where you made your first slit. Hold it far enough to not overheat the plastic and cause bubbles.
- Once warm enough use a bottle to open the slit and hold it in place until the plastic turns solid again (repeat for every slit)
- I used an old pot to close the bottom part of the strawberry tower using the heat gun (it already has drainage holes)
- Optional: spray paint the tower now and leave it to dry completely
- Hang the tower in any balcony, terrace, garden etc. Ideally in a well lit area
- Start from the bottom and fill every hole with your compost
- Make some space with your hands to fit your strawberry plants
- Water every hole and wait until your plants starts producing food 🍓

STEP BY STEP:
- Cut your watermelon rind into small cubes
- Soak the rinds for 2 / 3 hours using double the weight of water (1.3 L in this case and add 1/2 a cup of pickling lime or lemon
- Rinse well and set aside
- Dissolve your sugar (the same weight of your rinds) in 2 cups of water and bring to a boil
- Add your rinds to the sugar and let it simmer for 2 hours
- 10 minutes before the end of the 2 hours, add vanilla or lemon juice
- Let it cool down and refrigerate in a jar
NOTE:
- you can peel your watermelon if you don’t like the green part but I personally love it
- Use the preserve for cakes or eat it as is

Bokashi is a Japanese word which means “fading away”. You can just use 2 old buckets and start fermenting your food scraps without smell, or pests and you can compost almost anything!
TOOLS:
2 x old buckets
1 x drill
1 x flat drill bit
1 x 0.8 size drill bit
1 x spigot
1 x cheesecloth or similar
Bokashi bran
STEP BY STEP:
- Drill a hole at the base of one of the buckets using your flat drill bits (I used a 14 mm but it depends on the spigot size)
- Fit your spigot in the hole and secure it in place
- Drill holes at the bottom of your second bucket using a 0.8 size drill bit
- Slide the buckets with holes at the bottom inside your bucket with the spigot
- Place your cheesecloth inside and start layering bokashi bran, food scraps and so on
- Fill up the bucket and once full, leave it to ferment for 10-12 days
- Drain the liquid using your spigot every 2-3 days
- Donate the solids to any friend, family or community garden to bury in the garden
NOTE: The liquid can be used to water your plants or even to remove algae and/or faulty smell from your drainage. Wait 3 weeks before planting plants over your buried food scraps. Make sure to add bokashi bran for every layer of food scraps.

It’s called rhizome as it’s an underground stem which produces roots and new shots. Even a tiny bit of ginger left in the ground, will produce a new plant.

-optional: you can mix it with turmeric, orange and carrot
GINGER ICE CUBES:
Freeze the juice and use the ice cubes to make tea, cocktails or drink it early in the morning as a healthy shot for your gut system

We harvested 30 kg of different varieties from our plot in London.

Cucumber noodles 🍜 🥒
•500g flour
•3/4 teasp salt
•320ml water
•peel of 3 organic medium sized cucumber
(Makes 2 large portions)
🥣 instructions
-blend the cucumber peel and water for 2 min or until it’s almost smooth
-strain the juice and use the remaining pulp in the ice cubes together with some lime and mint to give a delicious summer taste to your drinks or lemonades
-in a bowl mix flour and salt and slowly add the water .
-mix everything for about 2/3 min or just until combined and don’t overwork it. It will be a very sticky dough
-cover it with cling film and let it rest for 3 hours
-now knead it for 15 min then start stretching it and pull it back together
-keep stretching until it won’t break anymore(it could even take around 20 min)
-now make like a long sausage and sprinkle lots of flour to your working surface so the noodles won’t stick together when stretching
-now stretch the dough and pull it back to make 2 thick noodles then stretch the 2 noodles and pull them back to make 4 and so on
-boil for 2 min and immediately rinse under cold water for a few second but not too much or they will stick together (this is a crucial step or your noodles will end up dry)
-serve with you fave sauce in this case we’ve used homemade crispy chilli oil ,black sesame ,soy sauce and spring onions
