Baking sourdough is a little dramatic isnβt it? π
Itβs just flour, water, salt, and sourdough starter that ferments over time. Itβs a pretty meditative process until you start baking.
Then, you slash the loaf with a sharp blade, introduce it to heat, I add some ice cubes for extra steam and a crispier crust, and bake it. Uncovering the lid halfway through is perhaps the most nerve-wracking part because you canβt guarantee itβs going to be a great loaf until you see it. And at that point, thereβs no going back.
I usually talk about how I love the process of slowing down with bread baking, but perhaps itβs actually the final act suspense that I love and makes sourdough such a joy to bake.

Tomorrow is the start of Oktoberfest and youβve gotta make these soft Sourdough Pretzels! π₯¨ π»
I use a somewhat unconventional method to get the quintessential color on these pretzels that doesnβt involve lye- a baked baking soda bath!
Yep, bake a sheet pan of baking soda and it will concentrate the soda to a higher PH, which will make the solution more alkaline. This contributes to better browning.
Itβs not a 100% necessary step (you could do a normal baking soda bath like bagels or use lye if you have it), but I think itβs a good in between option for home bakers looking for that dark brown pretzel color but donβt want to deal with caustic lye around (πββοΈ).
Thereβs some rye flour added for flavor (sub with whole wheat) and I prefer to add a pinch of instant yeast, which contributes to their soft and chewy texture. Once again, optional, but it was a little trick I picked up from expert baker @sourdoughhough last year.
With pretzel salt, dipped in some whole grain mustard, with a beer stein, these are hard to beat. Theyβre also great for football season!

Thereβs nothing like freshly baked bread.
The crumb is tighter because it didnβt ferment completely (bulk fermentation was about 30mins less than average at about 5 hrs at 78Β°F).
And see how prominent that ear is (the flap of bread that peels up when scored)? Itβs a little too big. Thatβs because underfermented loaves have a lot more potential fuel in them so they can have huge oven springs, sometimes big holes surrounded by a tight crumb, and an overall unbalanced look to them. Essentially, the dough could produce more CO2 gases during fermentation, so when they hit a hot oven, the yeasts expand wildly.
A plus of underproofing slightly is that scoring is a lot easier. The blade quickly cuts and glides through the loaf. On the other hand, an overproofed bread will be stickier and the blade can get stuck.
Overall though, it was a nice loaf and weβre talking maybe 30-45mins more proofing and it would have been golden.

Wait for the crumb revealβ¦ and some reflections on this loaf π
Made this sourdough bread with about 20% @haydenflourmills artisan bread flour, which Iβve been experimenting with. It was super active and I should have cut bulk fermentation short by another 30mins or so bc I had some shaping issues since the dough was on the verge of overproofing.
The fast fermentation had a cascade effect with a rushed and stickier shaping and a more difficult score (you can see my sharp bread lame had a hard time cutting and I had to go over it again), which both led to a trapped air pocket in the dough. So even though I was decently satisfied with the result considering the circumstances, the largest hole in that crumb reveal isnβt from an open alveolus or open crumb, but actually from a missed air pocket during shaping.
That being said, it was a delicious loaf and experimenting with new flours is probably one of my favorite things to do. Iβll note for next time I use this flour to cut bulk a little shorter!

The first apples are in season here in New England, so I had to make up one of my favorite fall treats- apple fritters!
This almost donut is so easy to make with crispy, fried exteriors and juicy, apple centers. And even better, they come together in less than 30 mins! No proofing required.
The apples shine here with lots of chopped apples and applesauce in the batter and a two-ingredient applesauce glaze or cinnamon sugar dusting. I use cinnamon and nutmeg to spice, but itβs a flexible recipe if you want different warming spices.
