French Onion Steak Pinwheels

Inspired by the traditional French Onion Soup, we are making a steak pinwheels with all of those flavors while wearing my @qalo ring.
Caramelizing some onions takes a while so make sure to give yourself at least an hour to do this. Once they are caramelized, we will flatten some skirt steak, top with Swiss cheese and add the caramelized onions. Tie up into pinwheels, sear over the flames then let cook on the cooler side till 125F. Finish off with a gruyere cheese crust, and you have a dope meal.

🐷 Pork butt 10-12 lbs
🔪 Score the fat side
👹 Sriracha as a binder
(You can use Mustard or Hot Sauce)
💥 Favorite BBQ Rub
💨 Set Smoker to 225 degrees
🌡️ Set Thermo probe to 170 degrees IT
😮💨 When IT reaches 170 pull out
💥 place in a 1/2 pan with 2 cups Coke
(You can use beer, soda, or 🍏 juice!)
🙆🏻♂️ Cover with foil and back in the smoker
🌡️ When Thermo probe hits 203 degrees
💤 Rest for 1 hour
Tip: use a foil 1/2 pan under the pork butt to catch the fat and use this fat when you add the coke, beer, or apple juice when wrapping! Fat = Flavor! 💥

Chipotle Lime Ranch Recipe:
* Place everything in a blender and blend till smooth
* ¾ cup sour cream, ½ cup mayo, ½ cup chicken broth, 1 tsp apple cider vinegar, 3 chipotle peppers in adobo sauce, 1 tsp dill, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, Juice from 1 lime
* Ranch recipe from @burnt_pellet_bbq
Brisket:
* Season and smoke your brisket overnight at 225° until it hits 203° and is probe tender
* I’m smoking with @bearmountainbbq red, white and blue pellets which is a blend of Oak & Hickory for that traditional Texas smoke
* Let your brisket rest for at least an hour (I like to hold mine for 4-6 hours in the oven)
Elote:
* While the brisket rests, grill your corn over high heat to get a char on all sides
* Once that’s done, cut the corn off the cob into a bowl. Add 1/2 cup mayo, juice of 1 lime, 1 red bell pepper, 1 jalapeño, 1-2 tbsp cilantro, 1/2 cup cotija cheese snd 1 tbsp tajin (taste and adjust as needed. This was for 5 corn)
Tacos:
* Melt cheese on a corn tortilla and then top with brisket, elote and chipotle lime ranch.
* Enjoy!
