Recipe -

Tri Tip:
Coat with olive oil and season heavily with salt pepper and garlic powder. Roast at 300* on wire rack for 45 minutes or until internal temp reaches 130*. Sear on high heat for 45 seconds per side and let rest.

Potato chips:
Slice your chips using a mandolin. Lay out on paper towel and heavily salt. Let sit for 10 minutes then thoroughly dry with another paper towel. Heat neutral oil to 350* and fry until golden brown. Remove and let dry on paper towel or wire rack.

Finely chop 1 bunch each of parsley and cilantro. Finely mince 5 cloves of garlic, half a red onion, 1 jalapeño and 1 fresno chili. Mix everything in a bowl with 1 cup of red wine vinegar, 3/4 cups of orange juice, 1/2 cup of olive oil and the juice of a lemon. Season with a biggg pinch of salt and pepper.

Mix sour cream and mayonnaise with chives, salt, horseradish, and Worcestershire for white sauce.

To a toasted sourdough baguette, add white sauce, roasted tomatoes, steak, chimichurri, potato chips. Add more white sauce to toasted baguette and top your sandwich. Cut on the diagonal.
