2 1/4 cups hot stock or water
1 tbsp olive oil
Salt
INSTRUCTIONS
1. Add rinsed rice and hot stock or water to 9” x 9” pan, cover and bake for 25 minutes or just until rice is just tender.
2. Leave covered for 10 minutes before serving. Enjoy!

Here’s a great one to add into your weekly rotation: sheet pan fajita’s! Easy and nutritious. Recipe details below:
INGREDIENTS
1 lb boneless skinless chicken breasts
2 bell peppers
1 large onion
3 tbsp olive oil
2 tbsp Storebought fajita or tex mex seasoning Or
4 tsp chili powder
1 tsp onion powder
1 tsp garlic powder
1/2tsp cumin
1/2 tsp smoked paprika
Salt and pepper
3 tbsp lemon or lime juice
1/3 cup chopped cilantro
INSTRUCTIONS
1. Cut chicken breast into 1/2“ strips, cut bell peppers and onions into strips.
2. Add to large bowl and add olive oil and seasonings.
3. Add to parchment on a large baking tray, bake at 425 F for 12 – 15 minutes on top rack or just until chicken is just done – do not overcook.
4. Remove from oven – set to broil and broil for 2 minutes just until slightly charred.
5. Remove from heat immediately, add lemon or lime juice and cilantro and extra salt.
6. Place on serving platter along with garnishes and tortillas. Enjoy!

1. Chop onions and garlic – sauté in oil just until softened.
2. Add tomatoes and sauté about 3 minutes just until starting to char.
3. Add olives, orzo, stock, chickpeas and salt, cover and simmer for 15 minutes or just until orzo is tender and liquid has evaporated.
4. Add feta and cilantro, enjoy!

1 ½ cups diced onion
2 carrots diced
2 celery stalk diced
2 garlic cloves minced
8 cups chicken stock – lower sodium
2 cups diced rotisserie chicken
1/3 cup brown rice
Salt and pepper
Fresh parsley as garnish
INSTRUCTIONS
1. Dice onion, celery and carrot and chop garlic.
2. Add oil to soup pot and add all vegetables and garlic and saute for 5 minutes, just until tender.
3. Meanwhile chop 2 cups rotisserie chicken add stock to vegetables along with chicken and rice.
4. Bring to a boil, cover and simmer for about 20 – 25 minutes or just until rice is tender, garnish with fresh parsley. Enjoy!
