10 oz pasta
1 Tbsp salt
8 oz Parmesan cheese
2 eggs
1 Tbsp Dijon mustard
4-5 hotdogs
Black pepper
2 Tbsp butter
Boil a large pot of water with 1 Tbsp kosher salt. Cook the pasta till just al denté according to the package instructions. Set aside 2 cups of pasta water before draining pasta. Drain pasta completely and set aside
Add the parm to a blender and blend until finely grated. Add the eggs and a small splash of the pasta water. Blend again. Add the remaining pasta water, 1 Tbsp mustard, and some black pepper. Blend again until smooth.
Chop hotdogs vertically and then into small bits. Fry hotdog pieces on a large skillet over medium heat until they shrink in size, after about 5 minutes. Add the cooked pasta, 2 Tbsp butter, and the cheese pasta water mixture to the skillet. Stir continuously over medium heat until sauce begins to thicken, about 3-5 minutes. It should be thinner than wall paint but still glossy and cohesive. Remove the skillet from the heat while the sauce still looks more runny than you desire, but still glossy. Keep stirring off the heat and the sauce will thicken even more. Serve immediately with more salt and pepper.

Green Bean Salad
-10 oz green beans, ends cut
-2 Tbsp kosher salt
-1/4 cup Greek yogurt
-2 Tbsp mayo
-1 Tbsp lemon juice
-1 Tbsp tahini
-10 pepperoncinis or capers, chopped
-1 clove garlic, grated
- salt and pepper to taste
Set a large saucepan of water and 2 Tbsp salt to boil until there are rolling bubbles. Add the trimmed beans and boil for 2 minutes. Immediately drain the water from the green beans and run the pot of green beans under cold running water. Add ice cubes to keep the water cold while you make the dressing.
Mix the rest of the ingredients together in a bowl and toss with the blanched green beans!

1/2 cup Hellmann's Mayonnaise
1 red onion
2 Tbsp olive oil
1/2 tsp salt
1/2 tsp sugar
juice of 1/2 lemon
1 cup roughly chopped basil
bread, salted and sliced tomatoes
Instructions
Peel and slice the onion. Add the sliced onion and 2 Tbsp olive oil to a large skillet over medium heat. Add salt and sugar.
Stir until the onions are soft, 3 minutes. Then pat the onions into a flat layer onto the base of the skillet. Let this side of the onions fry for 3-4 minutes, or until the edges are brown and slightly charred. Stir the onions once more and then repeat the patting and frying process. Add the lemon juice and stir again, scraping up any fond (browned bits) stuck to the bottom of the pan.
Take the onions off the heat and add the basil and stir to combine again.
Mix everything together with 1/2 cup mayo in a separate bowl or the mayo jar itself! Spread onto toast and layer with fresh tomato slices.
