why do you fillet it differently that most other fish? is there no way around the bones?

You can fillet them like every other fish too. But in other fish if you cut them this way you lose out on meat unlike salmon

What makes it the wagyu of fish? That tag? I’ve caught salmon much, much fresher and given them to friends hours after being caught.

I mostly sell hours out of the water local harvest. Wagyu is known for marbling. This is the best marbled salmon in the world period.
