Cottage Cheese Breakfast Muffins — #ad Made with @KempsCows . Very easy to make, high in protein, and perfect for meal prepping to eat on busy weekday mornings.

RECIPE:
1 cup flour, ground sunflower seed meal, or almond flour
½ teaspoon baking powder
½ teaspoon salt (reduce to ¼ teaspoon if you add bacon or sausage)
4 eggs
⅔ cup Kemps cottage cheese
¼ cup shredded cheese
2 Tablespoons avocado oil

Optional Add-Ins:
Diced vegetables (like bell peppers, spinach, or mushrooms)
Cooked bacon or sausage
Herbs or spices

1. Preheat oven to 350 degrees F.
2. Whisk together flour, baking powder, and salt in a mixing bowl.
3. In a separate bowl, beat eggs until frothy. Add cottage cheese, shredded cheese, and oil. Mix well.
4. Gradually add dry ingredients to wet ingredients, stirring until just combined. (Fold in any optional add-ins at this point.)
5. Spoon batter into individual baking cups in a silicone muffin pan, filling each cup about halfway full.
6. Bake until muffins are fully cooked through, about 18-20 minutes.
7. Remove muffin pan from oven and allow muffins to cool in the baking cups for a few minutes before removing muffins from pan and serving or storing to eat later.

RECIPE:
¾ cup Kemps cottage cheese
½ cup buffalo sauce
2 Tablespoons mayonnaise

In a blender or food processor, add cottage cheese and blend until smooth and creamy. Add buffalo sauce and mayo and blend again.
Transfer the whipped buffalo cottage cheese dip to a serving bowl or dish. (Optionally, refrigerate the dip for 1-2 hours before serving.) Serve with sliced vegetables and/or crackers.

Keto Chicken Nuggets - an easy recipe that can be made in 30 minutes! The nuggets are crispy on the outside, tender on the inside, and full of flavor. The full recipe is written below and you can find a printable version is binked in my lio!

INGREDIENTS:
12.5-ounce can canned chicken, drained, patted dry
1 cup shredded mozzarella cheese
1/2 cup ground sunflower seed meal or almond flour
1 egg
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon pepper
1/2 cup crushed pork rinds
1/8 teaspoon ground cayenne pepper

INSTRUCTIONS:
1. Preheat oven to 450 degrees F and arrange oven rack on middle rack. Line baking sheet with parchment paper and spray generous coating of non-stick cooking spray atop parchment paper.
2. Mix together canned chicken, shredded mozzarella, ground sunflower seed meal, egg, garlic powder, onion powder, and pepper with an electric mixer.
3. In a separate shallow mixing bowl, whisk together crushed pork rinds and cayenne pepper.
4. Using a spoon, scoop out ~2 Tablespoons of chicken mixture and form into nugget shape, then gently dip and coat all sides of nuggets in crushed pork rinds mixture before placing on prepared baking sheet. Repeat this process to yield 15 total nuggets placed in a single layer on baking sheet. You will have leftover crushed pork rinds; do not discard.
5. Transfer baking sheet to oven and bake for 7 minutes. Remove baking sheet from oven and, using forks, flip each nugget over. Sprinkle remaining crushed pork rinds atop other side of nuggets, then return baking sheet to oven and bake for additional 6 minutes.
6. Remove the baking sheet of chicken nuggets from the oven. Allow nuggets time to cool slightly before serving on their own or with your favorite dipping sauce.

Chicken Salad Wraps:
1 cup roughly chopped cooked chicken (canned, rotisserie, or leftovers)
3 Tablespoons mayonnaise
9 sundried tomatoes, roughly chopped
1 Tablespoon capers
1 teaspoon white vinegar or lemon juice
¼ teaspoon salt
⅛ teaspoon pepper
1 Tablespoon finely chopped fresh basil
12 Mission Zero Net Carbs Sundried Tomato Basil Tortillas

Sundried Tomato Dipping Sauce:
½ cup mayonnaise
7 sundried tomatoes
1 teaspoon hot sauce
⅛ teaspoon pepper

1. Prepare Chicken Salad: To a mixing bowl, add chicken, mayo, sundried tomatoes, capers, vinegar or lemon juice, salt, and pepper. Stir to combine. Taste and add more vinegar, salt, and/or pepper, based on taste preferences.

2. Prepare Wraps: Spoon a small amount of chicken salad on one side of tortillas, sprinkle on some chopped basil, and carefully roll into a wrap. Secure each with a toothpick.

3. Prepare Dipping Sauce: To a food processor or blender, add all dipping sauce ingredients. Blend until well combined, then transfer to a serving dish.

4. Serve: Serve wraps with dipping sauce on side.
