What a bloody journey
If I think back to late 2016 and asked myself, where do you think you’ll be or what do you think you’ll be doing? I genuinely wouldn’t say that I’d be doing this…
I didn’t really plan this, I 100% didn’t know what I was getting in to. Being creative is something that I love, I’ve been asked what I’d do if I didn’t do this, it would almost certainly be something in the creative space, content creation, making music or something similar.
When an opportunity presents itself & you get that gut feeling that it’s worth pursuing, even though it might rip your soul to shreds, just go for it, it’ll be hard & painful, but those are the character building days, that make you are who you become.
I’d be lying if I said I’ve loved every second of this journey, but for the majority it’s been true added value to my life’s learnings and I’m grateful we’re still going & growing.
Will always be thankful to every single person who’s been part of the chaos, everyone’s played different roles in our journey and I have seen so many small businesses having to close, which is heart wrenching for the founder who’d have put their life & soul into their project, but also the effect it has on the economy when the level of support for SME’s is just not good enough.

Base
250g Digestives
50g Light Brown Sugar
50g Golden Syrup
125g Salted Butter
Filling
1020g Cream Cheese
10g Caster Sugar
8ml Vanilla Essence
120g Biscoff Caramel
100g Whole Egg
80g Egg Yolk
Method
For the base melt the butter, then mix all thr base ingredients together. Place in your tin and press down so firm.
For the filling mix all ingredients until smooth, poir into tin and bake at 105c for 1 hour then turn down to 80c for 45 mins.
