(Recipe Below) Al Pastor-Inspired Chicken Wings💥

Here's how to make them on the Pit Boss Competition Series 1250:

Pellet Recommendation:
Competition Blend

Ingredients:
3 oz. Achiote paste
4 oz. pineapple juice
2 tbsp. apple cider vinegar
2 tsp. salt
1/4 tsp. cumin
2 tsp. dried oregano
1/2 cup canola / vegetable oil
8 whole chicken wings or 16 wing sections
Optional Garnishes: Grilled Pineapple, Pickled Onion, and Parsley

Directions:
Add the Achiote paste, pineapple juice, vinegar, salt, cumin, oregano, and oil to a blender, and blend until smooth to create your marinade.
Then, in a large bowl, coat your wings with the freshly blended Al Pastor Marinade. Once your wings are fully coated, cover, place in the refrigerator, and let rest for 6-24 hours.
Next, preheat your Pit Boss® Grill to 300°F, and place your wings on the top rack to roast. Turn the wings every 10-12 minutes until the internal temperature reaches 170°F
When your wings have reached their desired internal temperature, remove them from the grill, and garnish with grilled pineapple, parsley, and pickled onion.
Enjoy!

Here’s a High-Protein Breakfast Hash 💥 Skillet Style 🍳👨‍🍳 with

Bigger bonus is that you have breakfast meal preps ready for the week 💪

Ingredients
1 lb ground beef 
1 bell pepper
1 lb yellow potatoes
8 eggs
1/2 yellow onion
1/2 tbsp paprika
1/2 tbsp salt + pepper
1 tbsp olive oil
Chopped parsley for garnish

Directions
1. Heat your grill to 425°. Chop the potatoes, bell peppers and onions and add them to a skillet then cover with olive oil and seasonings. 
2. Place the skillet on the grill and close the lid for 15 minutes. 
3. Add in the ground beef and mix together then cover for another 7 minutes. 
4. Crack the eggs onto the skillet and let cook for 7-10 minutes. 
5. Remove from the grill, let it rest and then top with chopped parsley. 
6. Distribute into meal prep containers and enjoy!

Ingredients:
12 manicotti shells
12 strips of bacon
1 pound of hot breakfast sausage
1 jalapeno, diced
8oz cream cheese
Pit boss Memphis bbq rub
Pit Boss sweet heat bbq sauce

Directions:
1. Preheat your @pitbossgrills to 300°F
2. While your grill is heating up, combine cream cheese, sausage, and jalapeno in a bowl and mix well.
3. Carefully stuff each manicotti noodle with the mixture.
4. Wrap each stuffed manicotti noodle with bacon, completely covering them.
5. Place them on a sheet tray and season each bacon-wrapped manicotti noodle with Pit Boss Memphis BBQ rub.
6. Smoke for 1 hour on the Pit Boss, or until an internal temperature of at least 165°F
7. Remove from the smoker, let rest, and enjoy!

Buffalo Ranch Chicken Wings. Are you in, Pit Boss Nation?!?!

Here's how
@Steph Foster made them on her Pit Boss.

Ingredients:
2lb chicken wings
1 TSP baking powder 
3 TBSP Pit Boss Southwest BBQ Rub
3/4 Franks Red Hot (Thick!)
2 TBSP Creamy Ranch Dressing
1 TBSP Butter

Directions:
1. Preheat Grill to 250F.
2. Pat wings dry with paper towel or let air dry in a fridge for a few hours before cooking. 
3. Season with baking powder and BBQ Rub
4. Smoke for 40 minutes at 250F. Increase temperature to 400F. 
5. In a heat safe pot combine Franks Red Hot Sauce, Ranch dressing and butter. Place on grill to heat for 5 minutes to warm but not burn. Stir until combined. 
6. Grill wings until they reach an internal temperature of 190F (min 165F) checking at 50 minutes. 
7. Place wings in a bowl, sauce and toss. Serve with ranch dressing on the side.
