We love the flavor of rasmalai, but we also love its shape! Let’s make rasmalai ice cream truffles today and decorate it to look just like the dessert – but with way more chocolate, which is always a good thing.
You’ll need POJ’s Rasmalai ice cream, white chocolate, chopped pistachios, and some saffron.
1.Scoop your ice cream onto some parchment paper with some space in between each scoop. Try to keep them spherical.
2.Throw it in the freezer to chill for at least two hours.
3. Before you pull them out, melt some white chocolate on a double boiler on the stove. Mix in some coconut oil to help emulsify and thin out the chocolate.
4. Get your frozen ice cream out and using a fork, dip each scoop into the chocolate, coating with a thin layer before placing it back on the parchment.
5. Before the chocolate hardens, top with your chopped nuts and saffron.
6. Put the truffles back into the freezer to set for an hour, then enjoy!
