Spicy Tuna Cucumber Wrapped Sushi
ingredients
1 large English cucumber
1/4 cup vegan cream cheese
2 tbs jalapeño Bitchin sauce
1/2 cup cooked cauliflower rice, chilled
5 ounces can skipjack tuna
* 1/4 cup shredded carrots
½ medium ripe avocado, sliced
4 radishes, cut into matchsticks
1/4 cup chopped asparagus
Sea salt and ground black pepper
2 tbs siracha
Low sodium soy sauce, for serving
instructions
1. Place a wooden sushi roller
2. Chop cucumber crosswise into two equal-sized pieces. Use a peeler or knife to cut cucumber into thin lengthwise pieces. Cucumber pieces should be thin enough to roll, but not tear.
3. Lay cucumber slices on the wooden sushi roller on cutting board to assemble.
4. In a small bowl, mix cream cheese and bitchin sauce
5. Drain Tuna then mix with sea salt & pepper & sriracha together
6. Spread a thin layer of cheese mixture on cucumber slices About 1 inch from the end of cucumber slices, place a small scoop of rice then the tuna mixture, then layer with a few slices of carrots, a few radish matchsticks and avocado slices.
7. Roll, tucking the filling ingredients tightly in. Secure with a toothpick and place in refrigerator until ready to eat.
8. Serve with your favorite dippin sauce
