Thick and creamy PSL overnight oats are the perfect make-ahead breakfast! These healthy pumpkin overnight oats are protein-packed thanks to Greek yogurt and naturally sweetened with a bit of our Yacon syrup. Top with whatever your heart desires!


1/4 cup plain nonfat Greek yogurt (or use vanilla!)
1/2 cup unsweetened vanilla almond milk (or any milk)
1/4 cup pumpkin puree
1-2 tablespoons yacon syrup
1/2 teaspoon vanilla extract
1/2 cup rolled oats
1/2 teaspoon of our PSL

In a medium bowl, mix Greek yogurt, almond milk, pumpkin puree, vanilla, and one tablespoon syrup until well combined.
Stir in oats, chia seeds and PSL powder. Taste and add more syrup if you want it sweeter. Pour into a glass jar or container and place in the fridge for 4 hours or overnight.
