Keto Chow Mini Funnel Cakes / Fry Bread Dough Recipe | Easy Keto Holiday Dessert

These golden wonders are a perfect blend of crispy and soft, transporting you to the fall festival with every bite.

Ingredients:

2 eggs
1 tsp baking powder
1/2 tsp cream of tartar
1/2 cup water
2 servings or scoops Pecan Sticky Bun Keto Chow

Instructions:

1. In a large mixing bowl, combine the Pecan Sticky Bun Keto Chow, baking powder, cream of tartar, eggs, and water. Use a hand blender to mix all the ingredients until a sticky dough forms.

2. Allow the dough to rest for 15 to 20 minutes.

3. Transfer the dough to a piping bag equipped with a large fluted tip. Pipe the dough into circles (or draw funnel cake doodles) onto squares of parchment paper.

4. Place the parchment paper squares with the piped dough onto a baking sheet and refrigerate for at least 30 minutes.

5. While the dough is chilling, pour avocado oil into a pot with high sides, ensuring there's at least 3 inches of oil. Heat the oil to a temperature range of 325-350°F (163-177°C).

6. Carefully lay the cakes into the hot oil, dough side down, one by one. Fry for approximately 30 seconds or until they turn golden. Using tongs, gently remove the parchment paper from underneath.

7. Flip the cakes and fry for an additional 30 seconds until they are golden brown and crispy on both sides.

8. Remove the cakes from the oil and place them on paper towels to drain any excess oil.

9. Transfer the cakes to a cooling rack. While still warm, sprinkle with keto-friendly powdered sweetener or glaze them as desired. They are best enjoyed warm, right after being sprinkled with the sweetener.

Yield: 10-12 mini funnel cakes

Whip yourself up a batch of these classic peanut butter cups that are not only keto & low carb, but also tasty and full of essential vitamins and minerals to keep you well fed and energized throughout the day!

1/2 cup unsweetened peanut butter
1/2 stick unsalted butter softened (2 ounces)
1 serving Chocolate Peanut Butter Keto Chow (or 1 scoop)
1 teaspoon powdered sugar-free sweetener
8 ounces sugar-free chocolate
1 tablespoon coconut oil

Instructions
Combine the peanut butter, butter, Keto Chow and powdered sweetener in a medium mixing bowl. Mix with an electric mixer until fully combined.
Melt chocolate and coconut oil in microwave in 30-second increments. Mix together until smooth.
Line silicone mold with tiny cupcake liners, then add chocolate and allow to set in the freezer.
When the chocolate is set, add about a teaspoon of the peanut butter filling on top of the hardened chocolate. Cover with more chocolate and return to the freezer to set.
When they are firm, pop out of the molds and place in a air-tight container. Store in the fridge or freezer.

🎃 Keto Pumpkin Cheesecake Cookies 🎃 | Holiday Dessert Made with @Lakanto ’s New Monkfruit Sweetener with Allulose

You’ll definitely want to add this to the top of your list of holiday cookies to bake this season. I used the classic and golden versions in this recipe. Both compliment it very well!

*Ingredients*

-Filling-
3 oz cream cheese
1/4 cup Lakanto’s Classic Monk Fruit Sweetener with Allulose
1/2 tsp vanilla extract
1/4 tsp pumpkin pie spice

-Dough-
1/2 cup coconut flour
1/2 tsp baking powder
2 tsp pumpkin pie spice
1/4 teaspoon salt
1/3 cup coconut oil
1/2 cup Lakanto’s Golden Monk Fruit Sweetener with Allulose
2 egg yolks
1 tsp vanilla extract
1/2 cup canned pumpkin puree

-Coating-
1/2 tsp pumpkin pie spice
1/4 cup Lakanto’s Classic Monk Fruit Sweetener with Allulose

*Instructions*

Preheat your oven to 350 degrees F.
In a medium mixing bowl, beat the cream cheese, classic sweetener, vanilla extract, and pumpkin pie spice on medium-high speed.
Using a small cookie scoop, portion out the cream cheese mixture into about 6 portions onto a plate or baking sheet. Place in the freezer to harden for about 30 minutes as you prepare the dough.
Spread canned pumpkin puree in a thin layer onto a plate. Using paper towels, pat the puree to remove excess moisture.
In a small mixing bowl, combine the coconut flour, baking powder, pumpkin pie spice, and salt.
In a large mixing bowl, cream together the coconut oil and golden sweetener on medium speed until fluffy.
Add egg yolks and vanilla extract. Beat on medium speed until pale and fluffy.
Beat in dried pumpkin puree on medium speed.
Add coconut flour mixture and combine on low speed.
Using a small cookie scoop, divide the pumpkin cookie dough into approximately 12 portions on the prepared baking sheet. Flatten each portion. Place a frozen dollop of cream cheese in the center of 6 of the flattened cookies. Cover each with another flattened cookie and press the edges to seal in the cream cheese.
In a small bowl, mix together classic sweetener and pumpkin pie spice.
Roll each pumpkin cheesecake cookie dough in spice mixture. Bake for 12-13 minutes at 350 degrees F.

🍂Keto Chow Caramel Sauce🍂 | Recipe by Taffy Elrod

This caramel sauce (or in my case, caramel cookie dip) will evoke nostalgia in just a single spoonful. The toasted butter is what really brings it all together. It will make you feel like fall is really here! It’s comforting, it’s easy to make, and it’s keto-friendly. What’s not to love?!

Ingredients
1/2 cup unsalted butter
1 cup heavy cream*
2 tablespoons yacon syrup**
1 serving Salted Caramel Keto Chow
1/2 teaspoon pure vanilla extract
Salt coarse, for serving

Instructions
Melt the butter in a small saucepan over low heat for about five minutes, or until it begins to smell toasted, and the butter solids start to look golden.
Remove from heat and let cool for five minutes. Then stir in the heavy cream and yacon syrup.
Sprinkle the Keto Chow over the mixture and whisk until completely incorporated.
Stir in the vanilla extract.
Serve the sauce warm with a sprinkling of coarse sea salt.
Store in an airtight container in the refrigerator for up to two weeks.

*This sauce can easily be made into a dip by reducing the heavy cream to half a cup and refrigerating until thickened.
**If needed, substitute with another sugar-free syrup, or simply omit. This syrup does add 22 net carbs, unfortunately, so if this is a concern, we recommend omitting it altogether.

Ingredients:
1 serving Keto Chow Pumpkin Spice Caramel
1/2 cup Sugar-Free Sweetener
1 teaspoon Pumpkin Pie Spice
1 teaspoon Vanilla Extract
1/2 cup Pumpkin Puree

Chocolate Coating:
1/3 cup Sugar-Free Chocolate Chips
1 tablespoon Coconut Oil

Instructions:

In a large mixing bowl, add Keto Chow, Sugar-Free Sweetener, Pumpkin Pie Spice, Vanilla Extract, and Pumpkin Puree.
Mix well until all ingredients are thoroughly combined and the mixture has a dough-like consistency.
Using clean hands or a cookie scoop, take a portion of the pumpkin mixture and roll it into a ball, roughly the size of a walnut. Place the formed ball on a parchment or wax paper-lined tray. Repeat with the remaining mixture. Place the tray in the freezer for about 30 minutes to set up.
In a microwave-safe bowl, combine Sugar-Free Chocolate Chips and Coconut Oil.
Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted and smooth. This usually takes about 30-60 seconds in total.
Dip each pumpkin ball into the melted chocolate mixture, ensuring it's fully coated. Use a fork to lift the truffle out, allowing any excess chocolate to drip off. Place the coated truffle back on the lined tray.
Once all truffles are coated, place the tray back in the freezer for at least 30 minutes, or until the chocolate coating has set.
Once set, transfer the truffles to an airtight container and store in the refrigerator. Serve chilled and enjoy!

Yield: Approximately 10-12 truffles

Note: These truffles are best enjoyed within a week. Ensure they're kept refrigerated to maintain their shape and consistency
