One marinade, two uses. Two sheet pans, one dinner.
RECIPE
MARINADE
1 c plain yogurt
Zest and juice of 2 lemons
1 tbsp honey
1/2 tsp chili flakes of choice
1 tsp salt
Black pepper
4 Tbsp harissa paste
2 tsp ground cumin
1 tsp ground ginger
2 small grated garlic cloves
3-4 lb chicken, here i used 8 skin on bone in chicken thighs
Marinade chicken in a zip too bag overnight in the fridge using about half the marinade. Set remaining marinade aside **do not allow any utensils to touch the chicken then go back into the bowl with marinade. You want to keep the raw chicken completely separate from the marinade you will later use as dressing **
Roast chicken at 425 about 30 minutes on the same tray as cubes if squash or potato (here 1 acorn squash)
On a separate sheet pan, roast shaved brussels sprouts with a can of drained and rinsed chickpeas, salt, pepper, olive oil and about 1/2 tsp each garlic powder and paprika. Roast about 25 minutes.
Toss roasted brussels sprouts and chickpeas with reserved yogurt marinade. Serve all together
