STRAWBERRY BAKED CHEESECAKE FOR BREAKFAST 🤯 (easy, healthy, gluten-free, refined-sugar free)

Optional Crust:
- 30g Oats
- 1/2 tbsp Liquid Sweetener
- 1 tbsp Water
Filling:
- 1 Egg
- 80g Strawberries
- 100g Cream Cheese
- 1/2 tbsp Maple Syrup
- 1/2 tsp Vanilla
- 30g Oats
1. Preheat oven to 180°C / 160°C fan.
2. Add oats, liquid sweetener and water to a bowl, and mix. Press it into a small springform cake tin and bake for 10 minutes.
3. Add all the filling ingredients to a blender and blend until smooth. Pour that into your baked crust and bake for 15 minutes.
4. Leave it in the fridge overnight to cool and then in the morning: top with strawberry jam and fresh strawberries and enjoy

3. Roll the mixture into balls using damp hands. If the mixture seems too wet, add some more cocoa powder.

- 250ml Milk
- Small Handful Raisins
Frosting:
- 150g Greek-style Yoghurt @sojade_officiel
- 50g Cream Cheese or Soft Cheese @arladairyuk
- 1 tbsp Maple Syrup
- 4 Walnuts
METHOD:
1. Add oats ingredients to a bowl and mix it all up.
2. Add frosting ingredients to a bowl and mix with a fork until smooth.
3. Divide the mixture between two jars or Tupperware containers (add more milk to cover the oats if needed), top with chopped walnuts.

Episode 2: Spring Roll in a Bowl 😍
It’s basically a big bowl of spring roll filling and i am so here for it 😂 it’s SUCH a quick and easy meal prep recipe, it’s really nourishing too with a good dose of veg and around 50g (!!!) of protein per serving 💪🏼
It can be enjoyed hot or cold and i highly recommend topping it with crispy onions 🤤
RECIPE (serves 2 - double the recipe to make 4)
- 500g Mince of Choice (I used Turkey Mince)
- 1 clove Garlic
- 1 tbsp Ginger Puree or Grated Ginger
- 1/4 White Cabbage
- 2 Carrots
- 1/4 cup Soy Sauce
- 2 tbsp Maple Syrup or Honey
- 1 tsp Miso (optional)
- Cornflour Slurry: 2 tbsp Cornflour + 3 tbsp Water
- Crispy Onions (optional but recommended)
1. Heat 1/2 a tbsp of oil in a large pan then add mince, garlic and ginger and cook till browned.
2. Thinly slice cabbage & carrots and add to the pan and cook till soft.
3. Add the soy sauce, maple, miso & cornflour slurry and cook for a few more minutes.
4. Store in containers and add crispy onions before serving 😘

RECIPE:
- 160g Ground Almonds or Almond Flour
- 1/4 tsp Salt
- 1/4 tsp Baking Soda
- 3-4 Chai Tea Bags (I used @dragonflyteauk Chai Rooibos)
- 240g Bananas (2 Large Bananas)
Frosting:
- 120g Cream Cheese*
- 60g Greek Yoghurt*
- 1.5 tbsp Maple Syrup
- 1/2 tsp Ground Cinnamon
*use dairy-free to make vegan 🤗
1. Preheat oven to 180°C / 160°C fan.
2. Add dry ingredients to a blender and blend for a couple of seconds.
3. Mash bananas.
4. Add dry ingredients and banana to a bowl and mix to combine.
5. Scoop the mixture onto a baking tray, making 6 large cookie shapes. Flatten them and shape them as they don’t spread in the oven.
6. Bake for 15 minutes then leave to cool completely.
7. Mix together the ingredients for the frosting and pipe or spread onto your cookies.

They’re super easy to make (you only need one bowl 🤌🏼) and they’re healthy! They’re gluten-free, egg-free and refined sugar-free and can also be made vegan!
GO MAKE THEM 🤤
- 120g Oat Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 tsp Cinnamon; 1/4 tsp Nutmeg; 1/4 tsp All-Spice
- 225g Pumpkin Puree
- 125g Greek Yoghurt
- 85g Coconut Sugar
- 1 tsp Vanilla
- 60g Dark Chocolate
- 40g Pecan Nuts
1. Preheat oven to 180°C (350°F / 160°C fan) and line a loaf tin with parchment paper.
2. Add oat flour, baking soda and spices to a bowl and whisk.
3. Add in the coconut sugar and wet ingredients and fold until all combined.
4. Fold in dark chocolate and pecan nuts.
5. Transfer into your tin and top with more chocolate if you wish.
6. Bake for 20 minutes. Leave to cool then slice into 8 squares.

If you’re looking for an easy, healthy, high protein snack or dessert - MAKE THIS 😍 it’s such a good recipe to meal prep and munch on throughout the week 🙋🏻♀️
You only need 5 ingredients that you probably already have in your kitchen and I reeeeally think you’re gonna love it 😍
INGREDIENTS:
🍌 3 Large Bananas
🍌 60g Vanilla Protein Powder (vegan protein works best - I use @proteinworks vanilla creme)
🍌 50g Peanut Butter
🍌 60g Dark Chocolate
🍌 30g Peanuts or Cashews
1. Mash bananas (not too much though) then mix in protein powder.
2. Spread into a thin layer on some parchment paper- I do this on the inside of a lid of a large container.
3. Drizzle on Peanut Butter and melted Dark Chocolate then use a knife to make some pretty swirls.
4. Add chopped nuts.
5. Cover and freeze till solid.
6. Once frozen, slice into pieces and enjoy!

2. Spread into a thin layer on some parchment paper- I do this on the inside of a lid of a large container.
3. Drizzle on Peanut Butter and melted Dark Chocolate then use a knife to make some pretty swirls.
4. Add chopped nuts.
5. Cover and freeze till solid.
6. Once frozen, slice into pieces and enjoy!

Healthy Cheesy Garlic Bread French Toast made in the air fryer 🤯
First off - Lemme tell you why I think this is healthy. (ps. i’m not a nutritionist or dietician, just stating my opinion ❤️)
1. I believe that an all-inclusive diet is healthy. Everything in moderation and no restrictions - cheese and bread is literally my two favourite foods and I think it’s healthier to eat these foods than to restrict them.
2. Turning Garlic Bread into FRENCH TOAST 🥹 added more protein which will keep you fuller and satisfied for longer.
3. Cheese is high in protein and calcium 😉
4. Sourdough contains loads of minerals & vitamins and it’s good for your gut.
SO instead of looking at food negatively, and seeing everything that’s “wrong” with it - focus on what’s GOOD about it. How it can nourish your body and your soul ❤️
RECIPE:
- 1 Large Slice Sourdough (or 2 small pieces)
- 1 Egg
- 1 Garlic Clove, minced
- 1/2 tsp Mixed Herbs
- Pinch of Salt
- 25g Cheddar
- 25g Mozzerella
1. Whisk together egg, garlic, salt and herbs.
2. Dip bread in both sides to soak up the eggy mixture.
3. Airfry for 5 minutes @ 200°C
4. Flip over, top with cheese and airfry for another 5 minutes.
5. ENJOY IT.

Tastes like a brownie batter chocolate milkshake 🤌🏼 BUT it’s healthy 💃🏽 it also has some hidden veggies and is high in protein even if you don’t use protein powder!

1. Add all ingredients to blender and blend until smooth.
