Easy Baked Chicken Taquitos 🐔
Instructions
filling
- Shred chicken and separate from bones
Saute down ¼ white onion and whole red bell pepper
- Add shredded chicken with cumin, chili powder, and garlic powder
- Add cheddar and pepper jack cheese
Tortillas
- Oil a sheet tray and layer corn tortillas, spray top with oil and bake for 3 minutes
- Stack tortillas and take a big scoop placing on bottom 3rd of tortilla and roll tightly
- Place crease side down to stay closed and bake 400 until crispy
Pico
- 2 serrano peppers, 6 roma tomatoes, 2 garlic cloves, ¼ cup cilantro, 1 lime juice, season salt to taste and let sit in fridge to marinate

“Mapo Tofu” noodles for 2nd Friday of Lent

ingredients
- garlic
- red onion
- thai chilli
- soy sauce
- a green vegetable
- grrronion (scallion)
- chicken broth
- patis (fish sauce)
- rice wine
- vinegar
- honey
- szechuan pepper (ground)
- soft tofu
- shiitake mushrooms
- noodles (any)
- corn starch slurry (corn starch and water)
instructions
prep
- dice onion, shiitake mushrooms, garlic
- slice whites of green onion
- cut up veg of choice
- if using thick vermicelli noodles soak in water
1. in a pot sauté onion, garlic, and whites of scallion for a few mins
2. add shiitakes
3. add soy sauce, vinegar, rice wine, sesame oil, honey, patis (fish sauce), thai chilis, chicken broth
- bring to a boil add corn starch slurry to thicken up
4. bring salted water to a boil and cook the veg and noodles
5. combine everything
6. garnish with greens of green onions & sesame seeds (optional)
