“Mapo Tofu” noodles for 2nd Friday of Lent
quotes bc its not really mapo tofu jus inspired
ingredients
- garlic
- red onion
- thai chilli
- soy sauce
- a green vegetable
- grrronion (scallion)
- chicken broth
- patis (fish sauce)
- rice wine
- vinegar
- honey
- szechuan pepper (ground)
- soft tofu
- shiitake mushrooms
- noodles (any)
- corn starch slurry (corn starch and water)
instructions
prep
- dice onion, shiitake mushrooms, garlic
- slice whites of green onion
- cut up veg of choice
- if using thick vermicelli noodles soak in water
1. in a pot sauté onion, garlic, and whites of scallion for a few mins
2. add shiitakes
3. add soy sauce, vinegar, rice wine, sesame oil, honey, patis (fish sauce), thai chilis, chicken broth
- bring to a boil add corn starch slurry to thicken up
4. bring salted water to a boil and cook the veg and noodles
5. combine everything
6. garnish with greens of green onions & sesame seeds (optional)
