CRISPY MUSHROOMS w/ whipped green miso beans 🌿😮‍💨

AD | I absolutely love love love mushrooms and so I've teamed up with the wonderful
@morewithmushrooms to bring you this gorgeous summer plate. It's perfect for summer and great if you're inviting friends and family over for dinner. Mushrooms are one of my favourite ingredients because they're packed full of umami, so versatile, bring so much flavour to a dish and also give you a dose of healthy B vitamins too. I've served countless small plates this summer, and this has to be one of my favourites!! Enjoy! 🫶🏽✨

(serves 4-6 people as a small plate at a bbq)
For The Crispy Mushrooms
300g closed cup mushrooms
100g flour
1 tsp salt
1 tsp pepper
1 tsp chilli flakes
150ml water
100g breadcrumbs
50g crushed cornflakes
For The Whipped Green Miso Beans
400g cannellini or butter beans
3 tbsp miso paste
50g fresh coriander
2 tbsp olive oil
1/2 lemon, juiced 
1 spring onion, roughly chopped (optional)
For Garnish
1/4 red onion, finely sliced
1 red chilli, finely sliced

1. Begin by combining your flour, salt, pepper, chilli flakes, and water in a small bowl. Whisk until a batter forms. In another bowl, combine your breadcrumbs and crushed cornflakes. 
2. Get your mushrooms and coat in the wet mixture followed by the dry mixture. Set aside and repeat until all mushrooms are coated. 
3. Place your mushrooms into an air fryer for 15 minutes at 190C. Make sure to check on them every 5 minutes as all air fryers differ!
4. Meanwhile, place all of your whipped green miso bean ingredients into a food processor or blender. Blend until smooth. 
5. Once your mushrooms are crunchy, remove from the air fryer. 
6. Serve up your dish by placing the whipped green miso beans down onto a plate, topped with your crispy mushrooms, sliced red onion, and red chilli. Enjoy!
