Make Danish carnival buns with our design assistant Laura 🫶🏼
Laura used 120g of a three hour sourdough to make theese delicious carnival buns 💓
👩🏼🍳 The recipe 👩🏼🍳
For the dough:
* 120g ready to bake sourdough
* 10g fresh yeast
* 140 g melted, cooled butter
* 2 eggs
* 60 g sugar
* 350g all purpose flour
* 5g salt
Vanilla custard:
* 3 egg yolks
* 300g milk
* 45g sugar
* 1tsk vanilla paste + 1tsk vanillasugar
* 30g cornstarch
Remonce:
* 60g sugar
* 60g marcipan
* 60g softened butter
Step by step:
- Melt the butter
- Let it cool down
- Add the sourdough, and yeast and combine.
- Add the remaining ingredients and knead the dough well.
- Let rest in 20 minutes, fold the dough, let rest for another 20 minutes – fold the dough again, and let rest for another 4 hours.
While the dough is resting and rising, make the vanilla custard:
Mix egg yolks, sugar, vanilla and cornstarch
Add the milk while heating op the mixture slowly while continuing to stir till it thickens.
When it has the right consistency, place in another bowl, cover and place in fridge.
Remonce:
Combine all the ingredients in a bowl.
After 4 hours roll out the dough, place the custard, remonce and chocolate and fold the bun so no filling will escape.
Bake in a hot 220g oven (regular oven) with steam for 10 minutes, turn the oven to convection heat, remove steam and bake to desired color (approx. 5 minutes).
