SRIRACHA & GINGER RED LENTIL PATTIES 🌶

Mother Raw wants you to eat more plants with their
#MotherRaw Five Plant Challenge! So to show you how easy and tasty eating a plant diverse diet can be, Evann Ryan created this simple red lentil fritter recipe including high protein tofu and red lentils, leeks, ginger, and carrots! Seasoned with #MotherRaw Sriracha Aioli and dressed in their Japanese Dressing and Marinade. Healthy, simple, well balanced, and flavour packed!

Recipe makes 10 patties
Macros per patty:
107 cals - 5g fat - 9g carbs - 5g protein

INGREDIENTS:
1 tbsp extra virgin olive oil
1 cup leeks, thinly sliced
1 cup carrots, thinly sliced
2-3 tbsp fresh ginger, minced
175g medium firm tofu, grated
2 heaping tbsp @motherraw sriracha aioli
1 cup red lentils
1 cup water
2 tbsp more @motherraw sriracha aioli
½ tsp salt
1 bottle @motherraw Japanese dressing and marinade

RECIPE:
1️⃣ Prepare the vegetables: leeks, carrots, and ginger.
2️⃣ Preheat a non-stick pan to medium heat and add leek, carrot, ginger, oil and a pinch of salt.
3️⃣ Sautéed for 5-7 minutes or until softened, set aside.
4️⃣ Grate your tofu using a cheese grater and add to a bowl. Add 2 tbsp @motherraw sriracha aioli to the grated tofu and toss to combine, set aside.
5️⃣ To a high speed blender add: one cup red lentils and one cup water, blending until smooth.
6️⃣ To a large mixing bowl add: sautéed veggies, grated tofu, blended red lentils, and 2-3 more tbsp sriracha aioli, and ½ tsp salt, mixing everything well.
7️⃣ Preheat a non-stick pan to medium heat. Spoon batter into rounds onto the hot pan and cook for 4-5 minutes, flip and press down on the browned side, flattening the lentil patty.
8️⃣ Cook on the other side for another 4-5 minutes or until browned on the second side. Remove from pan and continue until all the batter has been cooked.

🥬 SUSHI INSPIRED LETTUCE BOATS 🥬

We’re making the most of the final few days of summer with these refreshing and filling Sushi Inspired Lettuce Boats! A satisfying combination of crunchy textures, savory flavors, and a whole lot of plants. Whether you’re looking for lunch or dinner inspo, there’s no bad time to give this recipe a try!

INGREDIENTS
350g extra firm tofu
4 tbsp
#MotherRaw Japanese Dressing, plus more for drizzling
3 tbsp sesame seeds
1 cup cooked rice, cooled
1 head romaine lettuce heart
½ english cucumber, thinly sliced
1 large carrot, thinly sliced
Pickled ginger, for garnish, optional
1 nori sheet, thinly cut in 1-in long strips (optional)

DIRECTIONS
1️⃣ Cook rice to package instructions, set aside and let cool.
2️⃣ Preheat oven to 400F. Line a baking sheet with parchment and set aside.
3️⃣ Drain tofu and pat dry pressing down to squeeze out excess moisture. Cut into ½-in cubes.
4️⃣ Place tofu in a bowl and drizzle with dressing. Stir to coat. Cover bowl and refrigerate for 4 hours to overnight. If using immediately, place on prepared baking sheet and sprinkle with half of the sesame seeds. Flip and sprinkle with remaining seeds. Place in oven and bake for 15m. Flip cubes and continue baking, until golden and crisp, about 10m.
5️⃣ Pull lettuce leaves away from core and arrange in a single layer on serving platter.
6️⃣ To assemble boats, place a spoonful of rice in each lettuce leaf. Top with cucumber and carrot strips, and sesame tofu. Drizzle with dressing. Top each with a piece of ginger and sprinkle with nori strips, if using.

Greek Salad Sandwich Recipe:
🔥 Bread of Choice
🔥 Sliced Cucumber (1 Cup)
🔥 Lettuce (1 Cup)
🔥 Arugula (1 Cup)
🔥 Sliced Tomato (1 Cup)
🔥 Chopped Black Olives (¼ Cup)
🔥 Jalapeños (¼ Cup)
🔥 Capers (¼ Cup)
🔥 Chopped Green Onion and Dill (½ Cup)
🔥 Cooked Chickpeas (1.5 Cups)
🔥 Cooked White Beans (1 Cup)
🔥 Hummus (1 Cup)
🔥 Hemp Seeds (¼ Cup)
🔥 Mother Raw Greek Dressing (⅓ Cup)
🔥 Salt and Pepper to Taste

INSTRUCTIONS:
1. In a large bowl smash the white beans and chickpeas together.
2. Into the large bowl add hummus, hemp seeds, capers, Mother Raw Greek Dressing, fresh green onion, fresh dill, salt, and pepper to taste. Mix everything together to make the Greek filling for the sandwich.
3. Toast two slices of bread and build the sandwich with Mother Raw Greek Dressing spread onto both sides of bread, then build the sandwich from the bottom up with the Greek chickpea filling, lettuce, tomatoes, cucumbers, arugula, jalapeños, and black olives.
4. Add on a sprinkle of black salt for an extra kick of zestiness!

INGREDIENTS:
2 plum tomatoes
1 small red onion
1 bell pepper
1 avocado, halved
540 ml can black beans
540 ml can black eyed peas
341 ml can corn kernels
½ cup Mother Raw Ranch Dressing
Salt and pepper
8 tostadas
1 jalapeño (optional)

DIRECTIONS:
1️⃣ Dice tomato, red onion, bell pepper and avocado and set aside.
2️⃣ Drain and rinse black beans, black eyed pea and corn
3️⃣ Place tomato, red onion, avocado, beans and corn in a large bowl.
4️⃣ Pour dressing over ingredients and stir to combine. Season with salt and pepper to taste.
5️⃣ Spoon mixture over tostadas and top with jalapeño slices for some extra HEAT!

1 cup frozen brown rice
1 head broccoli, chopped
1 cup fresh spinach
1/2 cup eggplant spread or baba ganoush

INGREDIENTS:
Pulled Jackfruit
3 (400ml) cans jackfruit in water or brine
1 bottle + ⅓ cup
#MotherRaw Dressing Smoky Chipotle

Ranch Slaw
1.5 cups thinly sliced red cabbage
1.5 cups green or napa cabbage
1 cup julienned carrots
2 green onions, thinly sliced
⅔ cup #MotherRaw Ranch Dressing

For Serving
5 brioche buns

DIRECTIONS:
1. Drain and rinse jackfruit. Chop off the woody textured core of each piece.

2. Heat a large skillet over low-medium heat and pour in 1 bottle of Smoky Chipotle Mother Raw Dressing. Add jackfruit and mix to coat. Cover and let it cook down for 20-30 minutes, stirring occasionally and using two forks to pull apart the pieces.

3. Meanwhile, mix together slaw ingredients with Mother Raw Ranch Dressing and set aside until pulled jackfruit has finished.

4. Pour an additional ⅓ cup of Mother Raw Smoky Chipotle Dressing onto the pulled jackfruit. Stir to combine.

5. Top toasted brioche buns with pulled jackfruit and ranch slaw. Enjoy!
